▪️3 Tbsp hot water

▪️1 cup frozen cherries
▪️1/4 cup granulated sugar
▪️1/4 cup lemon juice
▪️2 Tbsp lime juice
▪️1/2 cup rum
▪️3 cups ice
▪️1/4 cup lemon lime carbonated beverage

In a blender, mix together all of the ingredients until smooth. Pour into glasses and enjoy!

YOGURT COVERED RAISIN NUTELLA CUPS 🍫

1 cup Nutella
1/4 cup coconut oil
24 yogurt covered raisins

1. Line a mini muffin pan with 24 paper liners. Set aside.
2. In a microwave safe bowl, melt the Nutella and coconut oil in the microwave in 30 second intervals until smooth.
3. Divide evenly into the prepared muffin pan and top with 1 yogurt covered raisin each. Transfer the pan to the freezer to harden. Remove from the freezer and transfer to an airtight container. Store in the freezer or the fridge.

HEALTHY PEANUT BUTTER AND BANANA OAT COOKIES 🍌🥜

▪️1 1/4 cups all-purpose flour
▪️1 tsp baking soda
▪️1/2 tsp salt
▪️1/2 tsp ground cinnamon
▪️1/4 cup applesauce
▪️1/2 cup brown sugar
▪️1/4 cup baking stevia
▪️1/3 cup crunchy peanut butter
▪️1 Tbsp honey
▪️2 tsp vanilla extract
▪️1 large egg
▪️1 large ripe banana, mashed
▪️2 1/4 cups old fashioned oats

1. Preheat the oven to 350℉. Line a baking sheet with parchment paper and set aside.
2. In a medium bowl, mix together the flour, baking soda, salt and cinnamon. Set aside.
3. In the bowl of.a stand mixer, cream together the applesauce, brown sugar and stevia until smooth. Mix in the peanut butter, honey, vanilla and egg until fully combined.
4. Slowly mix the dry ingredients into the wet ingredients until fully incorporated. Fold in the oats.
5. Using a medium cookie scoop, scoop the cooke dough onto the prepared baking sheet and bake in the preheated oven for 12-15 minutes, or until golden. Allow to cool on the baking sheet for 3 minutes before transferring to wire racks to cool completely.

Peanut Butter and Jelly Chocolate Cups 🍫🍓

▪️1/2 cup smooth peanut butter
▪️2 Tbsp salted butter
▪️1 cup powdered sugar
▪️2 2/3 cup chocolate chips
▪️1/4 cup coconut oil
▪️1/2 cup strawberry jam

1. In a medium bowl, cream together the peanut butter, butter and powdered sugar until fully combined.
2. Using a medium cookie scoop, scoop the peanut butter mixture into your hands. Form into 1.5 inch coins and place on a plate. Repeat with the remaining peanut butter mixture and place in the fridge to harden.
3. Line a muffin pan with 11 paper liners. Set aside.
4. In a medium microwave safe bowl, microwave the chocolate chips and coconut oil in 30 second intervals, mixing until smooth.
5. Pour around 1 Tablespoon of the chocolate mixture into each prepared muffin cup. Place the peanut butter coin on top. Top the peanut butter coin with around 2 teaspoons of the strawberry jam. Cover each muffin cup with the remaining melted chocolate. Place in the fridge until the chocolate has hardened.
6. Transfer the chocolate cups into an airtight container. Store in the fridge for up to 1 month, or in the freezer for up to 3 months.

MINI CHOCOLATE GANACHE CHEESECAKES 🍫

Crust
▪️1 1/3 cup graham cracker crumbs
▪️2 Tbsp granulated sugar
▪️10 Tbsp salted butter, melted
Cheesecake
▪️16 oz cream cheese, softened
▪️1 cup granulated sugar
▪️1/2 cup sour cream
▪️1 tsp vanilla extract
▪️2 large eggs
Chocolate Ganache
▪️3/4 cup chocolate chips
▪️1/2 cup heavy cream

1. Preheat the oven to 350℉. Line a muffin pan with paper liners and set aside.
2. In a medium bowl, mix together the graham cracker crumbs, 2 Tbsp sugar and butter until fully combined. Divide the mixture into the prepared muffin pan and press down with the back of a spoon. Set aside.
3. In a separate bowl, beat together the cream cheese and 1 cup sugar until light and fluffy. Mix in the sour cream, vanilla and eggs until smooth.
4. Divide the mixture between the muffin cups and bake in the preheated oven for 15-18 minutes, or until the center of each cheesecake is set. Allow to cool.
5. In a microwave safe bowl, microwave the chocolate chips and heavy cream in 30 second intervals, mixing until smooth.
6. Once the cheesecakes are cooled, pour the chocolate ganache over top. Place in the fridge until the ganache has set then transfer to an airtight container and store in the fridge.

RASPBERRY CREAM CHEESE THUMBPRINT COOKIES

▪️8 oz cream cheese, softened
▪️1 cup salted butter, softened
▪️1 1/3 cup granulated sugar
▪️2 1/3 cup all-purpose flour
▪️raspberry preserves

1. In the bowl of a stand mixer, cream together the cream cheese and butter until light and fluffy. Mix in the sugar until fully incorporated. Slowly mix in the flour until combined.
2. Cover the bowl and refrigerate for at least 45 minutes.
3. Preheat the oven to 375˚F. Line a baking sheet with parchment paper and set aside.
4. Using a medium cookie scoop, form the dough into balls. Place the balls on the prepared baking sheet and press your thumb into the centre to create a thumbprint.
5. Fill each thumbprint with the raspberry preserves.
6. Bake in the preheated oven for 10-12 minutes, or until the edges begin to golden.

Make the most of cherry season with this VEGAN CHERRY OATMEAL 🍒

1/2 cup 100% tart cherry juice
1/2 cup oatmilk
1/2 cup rolled oats
1 Tbsp chia seeds
5 medium cherries, pitted and chopped

1. Heat the cherry juice and milk in a small saucepan. Add in the oats and chia seeds. Bring to a boil, and reduce the heat. Allow to simmer for 4-5 minutes, stirring occasionally.
2. Pour into a bowl and top with cherries.

Easy Cream Cheese Danishes 👇👇

▪️4 oz cream cheese, softened
▪️1/3 cup granulated sugar
▪️2 Tbsp sour cream
▪️1/2 tsp vanilla extract
▪️1 tube crescent rolls (do not roll out)
Glaze
▪️1/3 cup powdered sugar
▪️2 tsp milk

1. Preheat the oven to 350℉. Line a baking sheet with parchment paper and set aside.
2. In a medium bowl, cream together the cream cheese, sugar, sour cream and vanilla until smooth.
3. Cut the roll of crescent roll dough into 8 even slices. Place them cut side down on the prepared baking sheet. Stretch and flatten the rolls in the centre so that it is easy to fill with filling.
4. Divide the cream cheese mixture into the flattened rolls and bake in the preheated oven for 15 minutes, or until the edges are golden brown. Allow to cool on baking sheet for at least 10 minutes.
5. In a small bowl, mix together the powdered sugar and milk until smooth. Drizzle over the cooled danishes.

John just bought 5 packets of store bought gnocchi, so I’ve got to make some weeknight meals with them.

BACON GNOCCHI 🥓

500 g store bought gnocchi
12 oz bacon, chopped
3 cloves garlic, minced
1 tsp cayenne pepper
1 (400g) can diced tomatoes
1 Tbsp tomato paste
3 Tbsp heavy cream
1/2 cup mozzarella cheese, shredded

1. Preheat the oven to 400°F.
2. Bring a medium saucepan of salted water to a boil. Cook the gnocchi in the boiling water until the gnocchi rises to the surface. Drain and set aside.
3. Meanwhile, cook the bacon until it starts to crisp. Discard most of the fat, then add in the garlic and cook for around 1 minute.
4. Add in the cayenne pepper, diced tomatoes and tomato paste. Cook for around 5 minutes. Mix in the heavy cream.
5. Remove from heat and mix in the gnocchi. Pour the mixture into a 9 inch square baking pan and top with the mozzarella.
6. Bake in the preheated oven for 10 minutes, or until the mozzarella is melted.
