​It is finally summer vacation! Don't get me wrong, I love teaching. But the final months leading up to summer feel like I am running on fumes. I need this break!

And with the summer comes so many over-ripe bananas. They just go bad so quickly that we can't seem to eat them fast enough. Which is saying something with 2 small children who love bananas. This Triple Chocolate Banana Bread is the perfect way to use all of those bananas.

The whole family loves this bread. It disappears within the DAY. There is rarely leftovers for the next day. It makes a perfect mid-day snack or a side for your morning coffee for when you want to satisfy your sweet tooth. Last week I actually made it 2 days in a row by request from my 3 year old. It is so good, I really couldn't object.

Triple Chocolate Banana Bread Ingredients

This fudgy chocolate banana bread recipe is so easy to make. All you need is:

  • mashed bananas
  • white sugar
  • unsalted butter
  • eggs
  • sour cream
  • vanilla extract
  • unsweetened cocoa powder
  • all purpose flour
  • baking soda
  • salt
  • semi-sweet chocolate chips
  • white chocolate chips

Tips

Storage: ​store this easy chocolate banana bread in an airtight container at room temperature for 3-4 days. You can also cover it in plastic wrap and then in aluminum foil for optimal freshness.

Experiment with different kinds of chocolate. ​Instead of semi-sweet, try swapping it out for milk chocolate or dark chocolate chips. Or mix all of them for a more intense chocolate flavor.

Make mini loaves. Instead of using a regular loaf pan, split it into mini loaf pans. You will need to bake it at the same temperature but for around 30 minutes instead, or until a toothpick inserted into the center of the loaf comes out clean.

Ingredients

  • 3 medium bananas mashed
  • ¾ cup granulated sugar
  • ½ cup unsalted butter melted
  • 1 large egg
  • 1 large egg yolk
  • ¼ cup sour cream
  • 1 ½ teaspoon vanilla extract
  • ½ cup cocoa powder (more for dusting)
  • 1 cup all purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup chocolate chips
  • ½ cup white chocolate chips

Instructions

  • Preheat the oven to 350℉. Lightly spray a loaf pan with cooking spray and dust with cocoa powder. Set aside.
  • In a large bowl, combine the banana, sugar, butter, egg, egg yolk, sour cream and vanilla until smooth.
  • In a separate bowl, mix together the cocoa powder, flour, baking soda and salt.
  • Mix the dry ingredients into the wet ingredients until just combined. Fold in the chocolate chips.
  • Pour the mixture into the prepared loaf pan. Top with additional chocolate chips and bake in the preheated oven for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
