Bedtimes with toddlers are exhausting. We have a whole routine, and somehow it still takes forever. But before I close the door to his room for the final time, my three year old will say "Mama? Can you bake something?". When I ask him what I should bake, 90% of the time he will say "baked oats". Safe to say, I have made this Chocolate Chip Baked Oatmeal recipe so many times in the past couple of months, making it is basically muscle memory at this point. If it is the fall, I will be making my Ginger Pear Beaked Oatmeal. But whatever baked oatmeal I make, my son is always so happy to see them in the fridge when he wakes up the next morning.
If you are looking for a great make-ahead breakfast idea, this is the one for you. I love making a batch at the beginning of the week so that we can have breakfasts ready for at least 2 days that week. Because these baked oats do not last for more than 2 days in my house. It is that good! However, if you wanted some individual sized baked oats, this Chocolate Chip Blended Baked Oats taste like cake that you can have for breakfast!

- Quick oats: This is the main ingredient! You can also use old-fashioned oats if you want a more dense texture.
- Eggs: This helps bind the oatmeal together.
- Whole milk: Adds moisture to the oats. Can be replaced with a lower fat milk, or a non-dairy variety.
- Unsweetened applesauce: Adds some sweetness and moisture. Can be replaced with a mashed banana.
- White sugar: This is optional. I usually don't add it if I am making it for my kids, but will add it if I am looking for my oats to be a little sweeter that morning.
- Pure vanilla extract: For that subtle vanilla flavor. You can also replace this with almond extract if you prefer.
- Baking powder: This helps the oatmeal rise in the oven, and prevents the texture from being too dense.
- Salt: To enhance all of the other flavors.
- Semisweet chocolate chips: My kids favorite part! You can replace this with whatever mix-ins you like.
- Cooking spray: To coat the pan, to prevent to oats from sticking to your square pan.
How To Make Chocolate Chip Baked Oatmeal

- Step 1: In a large bowl, mix together the oats, eggs, milk, applesauce, sugar, vanilla, baking powder and salt until fully combined. Fold in the chocolate chips.

- Step 2: Pour the batter into a lightly sprayed 9x9 inch square baking pan and bake in a preheated oven at 350℉ for 35-40 minutes. Allow to cool for around 10 minutes.

Storage: once the oats have cooled to room temperature, store leftovers in an airtight container in the fridge for up to 1 week.
Make it vegan. To make this recipe vegan, you will need to substitute the egg and milk. For the eggs, make a flax egg: mix 1 Tablespoon ground flaxseed with 3 Tablespoons of water. Allow to sit for 5-10 minutes, or until thickened. For the milk, you can use your non-dairy milk of choice. I love oat milk, cashew milk or coconut milk in this recipe. You can use soy milk or unsweetened almond milk too, but it won't taste as rich as the other milks. Also, make sure to use dairy free chocolate chips.
Experiment with different chocolate. For a different chocolate flavor, try using dark chocolate chips, milk chocolate chips or white chocolate chips. If you love peanut butter, make a peanut butter chocolate chip version by using both chocolate and peanut butter chips.
Replace the applesauce. Don't have applesauce? Replace it with a ripe banana or a nut or seed butter such as almond butter or cashew butter.

Chocolate Chip Baked Oatmeal Recipe
Ingredients
- 2 ½ cups quick oats
- 2 large eggs
- 1 ½ cups milk
- 1 cup unsweetened applesauce
- ⅓ cup sugar
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- ¼ teaspoon salt
- ¾ cup chocolate chips
Instructions
- Preheat the oven to 350℉. Lightly spray a 9x9 inch baking dish with cooking spray and set aside.
- In a large bowl, mix together the oats, eggs, milk, applesauce, sugar, vanilla, baking powder and salt until fully combined. Fold in the chocolate chips.
- Pour the mixture into the prepared baking dish. Top with additional chocolate chips, if desired.
- Bake in the preheated oven for 35-40 minutes. Allow to cool for around 10 minutes before serving.
Notes
- Storage: Store any leftover baked oatmeal in an airtight container in the fridge for up to 5 days.
- Freezing: To freeze, place squares of the cooled baked oatmeal in a large freezer bag. Freeze for up to 3 months. When ready to eat, reheat in the microwave for 30-60 seconds, or until warm.
- Double the recipe: Use a 9x13 inch pan when doubling the recipe. It will be a little thicker than this one, so you will need to add an extra 10 minutes to the baking time.
- Add ins: You can swap out the chocolate chips for the same amount of nuts, fresh fruit or dried fruit. If you wanted an extra crunch, try adding in ½ cup nuts to the original batter.
