Memorial day is just around the corner, and I am already planning my menu. And you can bet that this Healthy Watermelon Pizza will be happening at my house.

My toddler has been begging me to buy a juicy watermelon all week. It is his favorite fruit of the week, so now we have an entire watermelon in the house that needs to be eaten soon. Good thing the entire family loves this healthy dessert pizza.

This is such a great way to get my kids to eat fruit during the summer. Not that it is such a difficult task to get them to eat fruit. Fruit is probably half of our grocery bill, but this pizza is such a fun way to enjoy watermelon! I think I'm going to have to make it again for the Fourth of July!

Tips

Storage: you can store any leftover watermelon pizza in the fridge in an airtight container or loosely wrapped in plastic wrap for up to 1 day.

Make it vegan. You just need to swap out the yogurt for a dairy-free yogurt. I would suggest using coconut yogurt, but any type of yogurt works well.

Add some sweetener. Depending on what yogurt you are using, you may need to add some additional sweetener. I like using vanilla yogurt, so that is plenty sweet for me. But if you are using plain yogurt, sweetening it with some maple syrup or some sweet honey would be a good idea.

Top with your favorite toppings. I love just plain fruit toppings, but you can add some fresh mint leaves, coconut flakes, chocolate chips, a drizzle of honey.. honestly whatever you have on hand!

Use paper towels to dry off the watermelon. It is a lot easier spreading the creamy yogurt over a mostly dry surface. Drying out the watermelon will help spread the yogurt overtop.

Let everyone make their own watermelon pizza. Set out some watermelon wedges, yogurt and a bunch of fresh fruit and fresh berries. Then everyone can assemble their pizza and put on their own toppings.
