​Being from Vancouver, I am not used to the hot summers that we have been getting in Madison, Wisconsin. I'm used to basically the same temperature all year round. I was able to use my oven all year round. But now I am scrambling to think of some no bake desserts to make during the summer months. Good thing we are all obsessed with Nutella cups, especially these Vanilla Wafer Nutella Cups.

I used to only make peanut butter cups over the summer. But those are kind of labor intensive, and with two young kids, it is harder and harder to carve out time to make desserts, even if they are easy dessert recipes. But this one is as easy as it gets. It comes together in under 5 minutes! The hardest part about this recipe is waiting for the mixture to harden.

I have had to start hiding these Nutella cups from my toddler because he likes them a little too much, if that's even possible.

Vanilla Wafer Nutella Cups Ingredients

These mini cups are made with only 3 ingredients! All you need is:

  • 1 cup of Nutella (or any chocolate hazelnut spread)
  • ¼ cup of coconut oil
  • mini vanilla wafer cookies

Tips

Storage: Store these sweet treats in an airtight container in either the fridge or freezer. If you store it in the freezer, you could also store them in ziploc bags to save space.

Swap out the mini vanilla wafers. The great thing about this recipe is that you can make so many different variations. If you can find mini chocolate wafers, I imagine that would be good instead of the vanilla ones. But you can use your favorite mix-ins as well, such as dried cranberries, chocolate or peanut butter chips, etc.

Make them into larger Nutella cups. ​Line a standard sized muffin pan with paper liners and divide the mixture evenly into the cavities. These will be quite big and decadent, but I usually eat multiple at once so I find them to be a great size!

Ingredients

  • 1 cup Nutella
  • ¼ cup coconut oil
  • 24 mini vanilla wafers

Instructions

  • Line a mini muffin pan with paper liners. Set aside.
  • In a medium microwave safe bowl, microwave the Nutella and coconut oil in 30 second intervals, mixing until smooth.
  • Divide the Nutella mixture evenly in the prepared muffin pan. Top each Nutella cup with a mini vanilla wafer.
  • Place the Nutella cups in the freezer to harden, around 5 minutes. Transfer to an airtight container and store in the fridge or freezer.
