Donut Muffins

Easy Cinnamon sugar Donut Muffins. No need a donut pan to make these muffins that taste like donut holes.

Donuts are my favorite breakfast food. I mean, it's basically like you are eating dessert for breakfast. However, I am far too scared to make actual donuts because of the hot oil, and half the time I don't know where my doughnut pan is. So these Donut Muffins are the perfect solution.

Since Mother's Day is coming up, I am thinking of making some of these muffins to enjoy in the morning with a cup of coffee. I know my husband is going to try to make a nice breakfast with my toddler in the morning, but I think I am going to need a backup breakfast. And donuts in muffin form sound like the best Mother's Day breakfast treat I can think of.

Donut Muffins Ingredients

You just need a couple of simple ingredients to make this donut muffin recipe. All you need is:

  • all purpose flour - or white whole wheat flour
  • baking powder
  • baking soda
  • salt
  • ground cinnamon
  • large eggs
  • plain yogurt - or sour cream
  • brown sugar
  • oil
  • vanilla extract
  • melted butter
  • white sugar

Tips

Storage: Store these muffins in an airtight container at room temperature for up to 3 days, or up to 1 week in the fridge.

Do not use muffin liners. While paper liners are appealing because they typically create less mess, it does not work for this recipe. The muffin papers tend to stick to the muffins, so it is best to grease the pan.

Make Mini Donut Muffins. Instead of the medium muffins, make them in a mini muffin pan! Just grease the mini muffin tin, scoop the donut muffin batter evenly into each cavity and change the bake time to 8-10 minutes.

Use an ice cream scoop. One of my #1 hacks to scooping the perfect amount of batter into your muffin pan is to use an ice cream scoop. I love this ice cream scoop to spoon batter into muffin cups.

Ingredients

  • 2 cups all purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 large eggs
  • 1 cup plain yogurt
  • cup brown sugar
  • cup oil
  • 2 teaspoon vanilla extract

Cinnamon Sugar

  • ¼ cup salted butter melted
  • ½ cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  • Preheat the oven 350℉. Lightly spray a muffin pan and set aside.
  • In a large bowl, mix together the flour, baking powder, baking soda, salt and 1 teaspoon ground cinnamon.
  • In a separate bowl, mix together the eggs, yogurt, brown sugar, oil and vanilla until smooth.
  • Slowly mix the dry ingredients into the wet ingredients until just combined.
  • Divide the batter into the prepared muffin pan and bake in the preheated oven for around 15 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Allow to cool in the pan for around 5 minutes before transferring to wire racks to cool completely.
  • In a small bowl, combine the sugar and cinnamon. Dip each muffin into the melted butter, then dip in the cinnamon sugar.
