It is getting hot around here! I have already taken out my summer clothes from storage and my husband has forbidden me to turn on the oven some days last week. Time to start thinking of some no bake snacks to make!

These Almond Peanut Butter Chocolate Energy Bites make such tasty snacks or a quick breakfast idea when I am running late in the morning. They are made with 8 nutritious ingredients that are actually pantry staples in my house.

So the next time I want to satisfy my sweet tooth but also eat healthy, these energy bites make a great homemade snack idea.

Almond Peanut Butter Chocolate Energy Bites Ingredients

These no bake chocolate chip energy bites are made with 8 simple ingredients, there is no excuse NOT to make it. All you need is:

  • medjool dates
  • chia seeds - can use hemp seeds too 
  • almonds
  • old fashioned oats - or quick oats
  • creamy peanut butter - natural peanut butter can be used too
  • maple syrup - date syrup or agave nectar are good substitutes
  • coconut oil
  • semi-sweet chocolate chips - dark chocolate or mini chocolate chips work as well.

Tips

Storage: ​Store these no bake energy bites in in an airtight container in the fridge for up to 2 weeks. I would not recommend storing them at room temperature, as they may begin to lose their form when it is too warm.

Freezing: ​These little bites freeze very well. All you need to do is place them in a freezer-safe container and store in the freezer for up to 3 months.

Use a cookie scoop. ​To make sure that these peanut butter energy bites are the same size, I like using a medium cookie scoop before scooping into my hands. This is the cookie scoop that I use and love.

Make them vegan. ​The good thing about these healthy energy balls is that they are almost vegan. You just need to make sure that you use vegan chocolate chips.

Ingredients

  • 5 dates pitted
  • 1 tablespoon chia seeds
  • ¼ cup almonds
  • 1 ⅓ cup rolled oats
  • ¼ cup peanut butter
  • 3 tablespoon maple syrup
  • 1 tablespoon coconut oil
  • ¼ cup chocolate chips

Instructions

  • In a food processor, pulse the dates until they look like small pieces.
  • Add in the chia seeds, almonds, oats, peanut butter, maple syrup and coconut oil. Pulse until the mixture resembles coarse crumbs. Fold in the chocolate chips.
  • Using your hands, press around 1 Tablespoon of the mixture into a tight ball. Place on a baking sheet or plate, and place in the fridge for at least 30 minutes.
