Late Friday nights mean lazy Saturday mornings. Lazy mornings with my favourite breakfast, of course. It is really no surprise that it is oatmeal. AGAIN. But this morning, I wanted to make my oatmeal inspired by my favourite sandwich combo. Peanut butter and bananas. With some cacao nibs sprinkled on for good measure.

If you are an oatmeal hater, I am sorry. I can't stop with my addiction, and I just want to share my favourite combos with you. Maybe if I keep forcing them down your throat, you will eventually try one. And if I were you, I would start with my banana split oatmeal. Because it is all about the toppings, and I load it UP on that oatmeal!

BUT, if you are already on board the oatmeal train, how about adding another super simple combo to your rotation for an everyday kind of breakfast. The classic combo that reminds you of your childhood.. or if you are me, my midnight snack almost every night. Peanut butter and bananas. How can you go wrong? Plus it makes for a healthy breakfast for busy mornings, with no refined sugar and a drizzle of peanut butter on top for added healthy fats.

Peanut Butter Banana Oatmeal Ingredients

You only need 4 basic ingredients to make this easy recipe, the 5th being optional:

  • 1 ripe mashed banana
  • milk
  • old fashioned oats
  • natural creamy peanut butter
  • cacao nibs (optional)

I know a lot of people, John included, who are not a fan of cacao nibs. Which is fine, you can leave them out. But I can't get enough! I am almost glad that John doesn't like them, because then I get them all to myself!

This recipe is also healthy, as far as my oatmeal recipes go. No added sugar, this oatmeal is naturally sweetened with the banana. And, as every oatmeal recipe I make, this will keep you full until lunch.

Tips & Variations

Can I use quick cooking oats or steel cut oats instead of rolled oats? This recipe works well with either of those oats. Just know that the texture of quick oats makes the recipe a little bit more soft, whereas the steel cut oats will make the recipe a little more dry. Try adding an extra splash of milk (or a splash of non-dairy milk if you are making this vegan) if you are making it with steel cut oats.

Make this into a vegan peanut butter banana oatmeal. ​Instead of using regular milk, try using a non-dairy alternative. Some of my favorite replacements are almond milk, oat milk or soy milk.

Switch up the peanut butter. ​Instead of using regular peanut butter, try natural peanut butter instead. Or, if you wanted another taste altogether, I would try cashew butter or sunflower seed butter.

Make this oatmeal extra decadent. ​Instead of the cacao nibs, replace those with dark chocolate chips. And if you have multiple ripe bananas, make some banana slices and top the oatmeal with those.

Meal prep this recipe. ​This oatmeal is a great recipe to make ahead of time. Just allow the oatmeal to cool to room temperature, then place in an airtight container and transfer to the fridge. This oatmeal lasts around 3 days in the fridge.

Ingredients

  • 1 medium banana, mashed
  • ½ cup rolled oats
  • ½ cup milk of choice
  • 1 tablespoon peanut butter
  • ½ teaspoon cacao nibs

Instructions

  • In a small saucepan, mix together the banana, oats and milk. Heat on medium heat until thickened, around 5 minutes.
  • Pour into a bowl and top with peanut butter and cacao nibs.

    I rarely use banana for breakfast. I know it is a fantastic ingredient but it just turned out to be this way. However, I do need to try this recipe now because it sounds amazing!

  4. Would this recipe work with almond butter? It looks great but the only thing is that I'm super allergic to peanut butter. But I'm sure I could just make it with almond butter instead.

    I tried this at home and it is good! I use the Quacker Oats, and serve it during am craving for some snacks.
