Any time my toddler sees the boxes of ripe watermelon at the grocery store, he will always request that I buy some. And while no one in my family can resist a good juicy watermelon, we always end up with quite a bit of extra watermelon pieces.

Our favorite thing to do with the leftover watermelons is to freeze the watermelon chunks. It is so yummy to just snack on frozen watermelon that we always keep some in our freezer during the summer.

Now I think that my second favorite thing to do with watermelon is make this Frozen Watermelon Daiquiri. After the kids go to bed, I always love experimenting with different drink recipes. And with watermelon season coming to an end, what better way to say goodbye to it than with this daiquiri.

Tips

Use a good blender or a food processor. It is very important to have a good high speed blender to mix the the ingredients. If you don't have a good blender, you can always use a food processor.

What type of rum to use. A classic daiquiri will use either white or light rum. However, for a fun twist you can always switch it for dark rum or even coconut rum for a more tropical taste.

Adjust how slushy you want your drink. I like a really slushy frozen daiquiri, so I will even add some ice cubes into the mix if it isn't slushy enough. However, if you want it more on the watery side, add in some watermelon juice to the mixture, and mix until it reaches your desired consistency.
