This Peanut Butter Banana Oatmeal recipe is so easy to make and so filling too. This is a great breakfast idea for when you need to use up one ripe banana.
In a small saucepan, mix together the banana, oats and milk. Heat on medium heat until thickened, around 5 minutes.
Remove from heat then mix in the peanut butter until combined. Pour into a bowl and top with sliced bananas, peanut butter and peanuts, if desired.
Notes
Use a ripe banana. The riper and more spotty the banana, the sweeter your oatmeal will be. This helps add natural sweetness to the oats.
To store leftovers, allow the oatmeal to cool and place in an airtight container in the fridge for up to 3 days. Reheat the oatmeal in the microwave with an extra splash of milk to restore its creamy texture.
Milk choice: Any milk works in this recipe! Use almond milk, oat milk or soy milk for a dairy free option, or dairy milk for the extra protein.
Rolled oats vs quick oats: Rolled oats gives this recipe the best texture. If you are using quick oats, reduce the cooking time slightly as they cook much faster and can become soft very quickly.
