We just got back from our road trip around Illinois. Since we haven't been to many states in the US, we got to explore a couple new ones. We went to Wisconsin, Kentucky, Indiana, Ohio, then explored southern Illinois. 

Because of the coronavirus, most places were drive thru only, so we have been basically living off of fast food this past week.

Time for a sugar detox.

This sugar detox is John's idea. He has been feeling very blah lately, so I am joining him in a sugar free week in solidarity.

It has been half a day, and I am already regretting it.

But this recipe for Chocolate Peanut Butter Overnight Oats is helping.

Can you believe I have never made overnight oats before? 

But now that summer is here and the last thing I want is a warm bowl on a hot day. This may be how I will be eating oatmeal from now on!

That is, until the fall.

Chocolate Peanut Butter Overnight Oats

This oatmeal kind of reminds me of my Coffee Peanut Butter Cup Oatmeal, but it is WAY healthier.

And simple ingredients too! I'm sure these pantry essentials are already in your house.

All you need is:

  • oats
  • milk
  • peanut butter
  • cocoa powder
  • chia seeds
  • vanilla extract
  • sweetener of choice
  • salt

That's it!

Ingredients

  • ½ cup oats
  • ½ cup milk of choice
  • 3 teaspoon peanut butter
  • 1 teaspoon cocoa powder
  • 2 teaspoon chia seeds
  • 1 teaspoon vanilla extract
  • 2 teaspoon maple syrup
  • pinch of salt

Instructions

  • Combine all of the ingredients in a mason jar with a lid. Close the lid and shake well.
  • Refrigerate overnight. Top with desired toppings.

Notes

Total time does not include overnight refrigeration.

    Wow Cathleen, I am loving the texture of your overnight oats - sometimes mine turns out a bit runny and that's not my fav - but yours look fantastic and that combo of PB + Chocolate is always a great one!
