This homemade Funfetti Granola tastes like a birthday cake but in granola form! I love keeping them in a container for after school snacks with it too.

I have been really loving granola lately. Every time I go to the grocery store, I buy huge tubs of yogurt specifically for all of the granola I have been making these past couple of weeks.
But I think this Funfetti Granola might be one of my favorites that I have made this month. The golden brown clusters of oats compliment the rainbow sprinkles perfectly. I love bringing a Tupperware container full of this granola to work, or keep it as fun snacks to have around the house when I am craving something sweet.

Funfetti Granola Ingredients
Dry ingredients:
- Oats: This recipe works best using old fashioned oats (also known as rolled oats) rather than quick oats. This way, the granola will keep its shape during baking.
- Sweetener: I use brown sugar because I find that this creates nice granola clusters, but you can also use 1/4 cup honey or maple syrup instead.
- Salt and spices: You need to add salt to bring out the other flavors! Any kind of salt works, but I prefer using fine-grain sea salt. I also love adding cinnamon to all of my granola recipes.
- Mix-ins: Cashews and rainbow sprinkles compliment the cake batter flavor so well.
Wet ingredients:
- Oil: I love the taste of coconut oil in this recipe, and it adds a nice crisp to the granola. Extra-virgin olive oil works if you wanted a more savory granola, or don’t have coconut oil on hand.
- Liquid sweetener: I use a little bit of maple syrup to help bind the ingredients together. Honey or corn syrup can also be used in its place.
- Extracts: Cake batter flavor really makes it taste like a birthday cake granola. I use this one, but you can also replace it with 1-2 teaspoons vanilla extract or almond extract.

Tips
Storage: Store any leftover granola in an airtight container at room temperature for up to 4 weeks.
Line your baking sheet. I recommend lining your baking sheet with parchment paper to make sure that the sweeteners don’t stick to the pan.
Use a large baking sheet. If the granola is too crowded, it will not bake evenly. Using a large prepared baking sheet will ensure even baking for the granola.
Make sure you let the granola cool! The granola needs to be completely cooled to ensure you get some granola clusters. I have left it overnight covered loosely to make sure that it was completely cool.

Funfetti Granola
Ingredients
- 2 cups old fashioned oats
- 1/4 cup brown sugar
- 1/3 cup cashews
- 1/4 tsp ground cinnamon
- pinch of salt
- 2 1/2 tsp coconut oil
- 2 Tbsp maple syrup
- 1 tsp cake batter flavor
- 1/4 cup rainbow sprinkles
Instructions
- Preheat the oven to 300℉. Line a baking sheet with parchment paper and set aside.
- In a large bowl, mix together the oats, sugar, cashews, cinnamon and salt. Set aside.
- In a small microwave safe bowl, microwave the coconut oil for 30 seconds, or until melted. Mix in the maple syrup and the cake batter flavor.
- Pour the wet ingredients into the dry ingredients, mixing until the oat mixture is completely coated. Mix in the sprinkles.
- Pour the mixture on top of the prepared baking sheet, and spread it into one even layer.
- Bake in the preheated oven for 20 minutes, or until slightly brown.
- Allow to cool completely, then break into pieces. Store in an airtight container.
