My husband never used to like matcha. I get it. The matcha flavor isn't for everyone. Some people find the earthy flavor of matcha to taste more like dirt than tea. But I LOVE it. I seriously can't get enough of it.

So now after years of me making matcha recipes, he has converted. And he will even ask for a cup of matcha tea in the middle of the day. Now that he supports my matcha addiction, he doesn't mind that I have an entire cupboard dedicated to matcha powders, whisks and bowls. 

And after I made this Ninja Creami Matcha Ice Cream, my kid also says he loves matcha now. We are going to be a matcha drinking family, and I love it.

Ninja Creami Matcha Ice Cream Ingredients

This green tea ice cream is made with just 5 simple ingredients. All you need is:

  • cream cheese
  • white sugar
  • whole milk
  • half and half cream
  • matcha powder

Tips

Don't have half and half? Half and half is just table cream, so cream with around 10.5%-18% milk fat. You can replace it with heavy cream, but I haven't noticed too much difference in the creamy texture. However, if you use heavy cream you might risk getting a buttery texture that will coat your mouth. I honestly prefer half and half for that reason.

What kind of green tea powder to use. If you want to find a vibrant green powder to give it the classic green color, go for a high-grade matcha. Sometimes the Japanese matcha will be called ceremonial grade or culinary grade. This will give it the authentic matcha taste. This matcha powder is my favorite.

Make vegan ice cream. ​Instead of the half and half, use coconut cream and replace the milk with coconut milk, oat milk or almond milk.

Still powdery after the first spin? ​Add a splash of milk and use the re-spin setting.

Ingredients

  • 0.65 oz cream cheese
  • cup granulated sugar
  • 1 cup milk
  • ¾ cup half and half
  • 3 tablespoon matcha powder

Instructions

  • In a medium microwave safe bowl, microwave the cream cheese for 15 seconds. Mix in the sugar until it forms a paste.
  • In a small bowl, mix together the milk and half and half.
  • Slowly mix the milk mixture (1 Tablespoon at a time) into the sugar mixture until the sugar has dissolved. Mix in the matcha powder until smooth.
  • Pour into the Ninja Creami pint. Cover and freeze for at least 24 hours.
  • Place the frozen pint in the Ninja Creami and set to Ice Cream. If it is powdery, set to Re-Spin.
  • Scoop and enjoy!
