A fall recipe in the middle of summer? Have I gone crazy? This is definitely not the time of year for pumpkin recipes.

But it IS the time of year for creamy ice cream recipes. Plus, they sell pumpkin puree in stores all year round, so I don't know why more people aren't enjoying pumpkin treats in the summer.

This Ninja Creami Vegan Pumpkin Pie Protein Ice Cream is actually a healthy ice cream recipe if you can believe that. Unlike a traditional ice cream recipe that uses heavy cream, this ice cream is made with oat milk, protein powder and stevia. And even though this is a light ice cream, it is still super creamy. I'm telling you, owning a Ninja Creami is a game changer for eating healthier when you are always craving ice cream.

Ninja Creami Vegan Pumpkin Pie Protein Ice Cream Ingredients

This high protein pumpkin ice cream is just made with 7 simple ingredients. All you need is:

  • oat milk
  • pumpkin puree (NOT pumpkin pie filling)
  • stevia
  • unflavored protein powder (or vanilla protein powder)
  • pumpkin pie spice
  • instant pudding mix
  • graham crackers

Tips

What milk to use. While I love oat milk because it produces a very creamy texture, you can use any non-dairy milk you like. Soy milk or unsweetened almond milk would work, but it may make the texture a little icy. I would suggest a creamier milk such as cashew or coconut milk. If you did not need to make this a dairy-free recipe, you can also use cow's milk (fairlife milk works the best).

What to do with Ninja Creami Leftovers. Leave any leftovers in the Ninja Creami container and place in the freezer. When ready to eat, place in your Ninja Creami machine and use the lite ice cream setting. If the first spin still leaves a powdery texture, add a splash of milk and set to Re-spin.

Add your favorite mix-ins. This recipe makes a great ice cream base. I love adding in some mini chocolate chips, biscoff cookies or a sprinkle of brown sugar.

Ingredients

  • 2 cups oat milk
  • cup pumpkin puree
  • 1 teaspoon stevia
  • 1 scoop unflavored protein powder
  • ½ teaspoon pumpkin pie spice
  • 2 tablespoon instant vanilla pudding mix
  • 2-3 graham crackers

Instructions

  • In the Ninja Creami pint, using a hand frother, mix together the milk, pumpkin puree, stevia, protein powder, pumpkin pie spice and pudding mix until fully combined.
  • Cover and freeze for at least 24 hours.
  • Place the frozen pint container in the Ninja Creami and set to Lite Ice Cream. If it is powdery, add a splash of oat milk and set to Re-Spin.
  • Make a hole in the center and place the graham crackers in it. Set the Ninja Creami to Mix-Ins.
