Late Friday nights mean lazy Saturday mornings. Lazy mornings with my favorite breakfast, of course. It is really no surprise that it is oatmeal. AGAIN. But this morning, I wanted to make my oatmeal inspired by my favorite sandwich combo: Peanut butter and bananas.

If you are an oatmeal hater, I am sorry. I can't stop with my addiction, and I just want to share my favorite combos with you. Maybe if I keep forcing them down your throat, you will eventually try one. And if I were you, I would start with my banana split oatmeal. Because it is all about the toppings, and I load it UP on that oatmeal!

BUT, if you are already on board the oatmeal train, how about adding another super simple combo to your rotation for an everyday kind of breakfast. The classic combo that reminds you of your childhood... or if you are me, my midnight snack almost every night. Peanut butter and bananas. How can you go wrong? Plus it makes for a healthy breakfast for busy mornings, with no refined sugar and a drizzle of peanut butter on top for added healthy fats.

  • 1 ripe mashed banana: Make sure you use a brown banana to make the oatmeal extra sweet, and for easier mashing.
  • Milk: Can replace it with a dairy free milk if you wanted it to be vegan.
  • Old fashioned oats: The base of the recipe! You can replace it with quick oats, but the texture will be a little softer.
  • Creamy peanut butter: You can also replace this with your favorite nut butter or cookie butter.

How To Make Peanut Butter Banana Oatmeal

Step 1: In a small saucepan, combine the banana, oats and milk. Heat on medium heat until thickened, around 5 minutes.

Step 2: Remove from heat and mix in the peanut butter. Pour into a bowl and top with sliced bananas and additional toppings, if desired.

Peanut Butter Banana Oatmeal Expert Tips

Can I use quick cooking oats or steel cut oats instead of rolled oats? This recipe can work quick oats, but not so much for steep cut oats. Steel cut oats require significantly more cooking time and more liquid. If you are making it with quick cooking oats, reduce the cook time to ensure you don't over cook the oatmeal.

Make this into a vegan peanut butter banana oatmeal. ​Instead of using regular milk, try using a non-dairy alternative. Some of my favorite replacements are almond milk, oat milk or soy milk.

Switch up the peanut butter. ​Instead of using regular peanut butter, try natural peanut butter. Or, if you wanted another taste altogether, I would try cashew butter or sunflower seed butter.

Make this oatmeal extra decadent. Top the oatmeal with semi-sweet or dark chocolate chips.

Meal prep this recipe. ​This oatmeal is a great recipe to make ahead of time. Just allow the oatmeal to cool to room temperature, then place in an airtight container and transfer to the fridge. This oatmeal lasts around 3 days in the fridge.

  1. Use a ripe banana. The riper and more spotty the banana, the sweeter your oatmeal will be. This helps add natural sweetness to the oats.
  2. To store leftovers, allow the oatmeal to cool and place in an airtight container in the fridge for up to 3 days. Reheat the oatmeal in the microwave with an extra splash of milk to restore its creamy texture.
  3. Milk choice: Any milk works in this recipe! Use almond milk, oat milk or soy milk for a dairy free option, or dairy milk for the extra protein.
  4. Rolled oats vs quick oats: Rolled oats gives this recipe the best texture. If you are using quick oats, reduce the cooking time slightly as they cook much faster and can become soft very quickly.
