Funfetti Granola

This homemade Funfetti Granola tastes like a birthday cake but in granola form! I love keeping them in a container for after school snacks with it too.

Ingredients

  • 2 cups old fashioned oats
  • 1/4 cup brown sugar
  • 1/3 cup cashews
  • 1/4 tsp ground cinnamon
  • pinch of salt
  • 2 1/2 tsp coconut oil
  • 2 Tbsp maple syrup
  • 1 tsp cake batter flavor
  • 1/4 cup rainbow sprinkles

Instructions

  • Preheat the oven to 300℉. Line a baking sheet with parchment paper and set aside.
  • In a large bowl, mix together the oats, sugar, cashews, cinnamon and salt. Set aside.
  • In a small microwave safe bowl, microwave the coconut oil for 30 seconds, or until melted. Mix in the maple syrup and the cake batter flavor.
  • Pour the wet ingredients into the dry ingredients, mixing until the oat mixture is completely coated. Mix in the sprinkles.
  • Pour the mixture on top of the prepared baking sheet, and spread it into one even layer.
  • Bake in the preheated oven for 20 minutes, or until slightly brown.
  • Allow to cool completely, then break into pieces. Store in an airtight container.
