Cranberry White Chocolate Granola

I have been on a granola kick lately. Maybe it's because my toddler is requesting a lot of yogurt lately, but I have been craving it most mornings this week. It has been a new granola recipe every week for the past few weeks, and I am so excited to share with you some of my favorites.

But today's recipe is this Cranberry White Chocolate Granola. Quite honestly, the whole family picks this particular granola recipe as their favorite. My husband loves the nuts, my son loves the white chocolate chips and I love the granola clusters. It's a good thing I made a new batch last night, because my family can't get enough of it.

Cranberry White Chocolate Granola Ingredients

This granola mixture is just made with 9 wholesome ingredients. All you need is:

  • rolled oats
  • pecans
  • almonds
  • sea salt
  • honey
  • coconut oil (canola oil or melted cocoa butter works too)
  • vanilla extract
  • dried cranberries
  • white chocolate chips

Tips

Storage: ​Store this granola in an airtight container at room temperature for up to 4 weeks. You can also place it in a freezer bag, and freeze for up to 3 months.

Swap out the tree nuts. ​If you have an allergy to tree nuts, swap them out for either peanuts, pumpkin seeds and/or sunflower seeds.

Add some extra spices. ​Want a more fall tasting granola? Try adding in a teaspoon ground cinnamon or nutmeg.

How to enjoy it: ​Make a yogurt parfait, eat it with milk or just by the handful!

Replace the honey. ​Don't have honey? Try using organic maple syrup or brown sugar instead.

Ingredients

  • 3 cups rolled oats
  • ½ cup pecans coarsely chopped
  • ½ cup almonds
  • ¼ teaspoon salt
  • ¼ cup honey
  • ¼ cup coconut oil melted
  • 1 teaspoon vanilla extract
  • 1 cup dried cranberries
  • 1 cup white chocolate chips

Instructions

  • Preheat the oven to 300℉. Line a baking sheet with parchment paper and set aside.
  • In a large bowl, mix together the oats, pecans, almonds and salt.
  • In a small bowl, mix together the honey, coconut oil and vanilla extract.
  • Slowly mix the honey mixture into the oat mixture until fully coated.
  • Evenly spread the oat mixture over the prepared baking sheet. Bake in the preheated oven for 20-25 minutes, or until lightly golden brown. Allow to cool completely on the baking sheet.
  • Once cooled, mix in the cranberries and white chocolate chips.
