You know those days, where you just want to bake something? You have a pile of cookies, and other various baked goods, but you have the feeling that you need to bake? Or is that just me.

I already had some Oatmeal Cranberry Pecan Cookies and some Two Bite Brownies in the kitchen, but I also had one ripe banana slowly going very brown that needed to be used. Honestly any excuse to bake and I'm there.

These Eggless Banana Chai Latte Cookies are ready in under 30 minutes and are only 50 calories each. This small batch recipe doesn't last very long in my house!

  • Banana: Make sure the banana is very ripe. The browner and spottier the banana, the sweeter the cookies become.
  • Chai tea: Any brand of chai tea works, but these are the tea bags I use.
  • Quick oats: You can substitute rolled oats in this recipe, however the cookies will have a heartier and chewier texture, and may require a little bit more time in the oven.
  • White sugar: To add a little extra sweetness. You can replace it with either brown sugar or honey.
  • Instant Coffee: This combined with the chai tea gives that cozy chai latte flavor, and balances the natural sweetness of the banana.
  • Vanilla: Gives the cookies that warm latte flavor profile.

How To Make Eggless Banana Chai Latte Cookies

Step 1: In a medium bowl, combine the banana, oats, vanilla, instant coffee, sugar and the contents of the chai tea bag until fully combined.

Step 2: Scoop the cookie dough on a parchment paper lined cookie sheet and bake at 350℉ for 20-25 minutes, or until golden brown.

Storage: Store these cookies in an airtight container at room temperature for up to 3 days. You can also store them in the fridge for up to 1 week.

Freezing: These cookies freeze very well. Just place the cooled cookies in a freezer safe bag and freeze for up to 3 months. When ready to eat, thaw at room temperature for 10-15 minutes before eating.

Use a medium cookie scoop. This makes it so much easier to divide your cookie dough evenly. I personally use this cookie scoop.

Make sure to mash the bananas thoroughly. Mashing until there are no large chunks left will help all of the ingredients bind so there is no need for eggs.

Ingredients

  • 1 medium ripe banana
  • ½ cup quick oats
  • 1 bag chai tea
  • ¼ teaspoon vanilla extract
  • ¼ teaspoon instant coffee powder
  • 2 tablespoon granulated sugar

Instructions

  • Preheat the oven to 350℉. Line a baking sheet with parchment paper and set aside.
  • In a medium bowl, mash the banana. Add in the oats and mix until fully combined. Break open the tea bag and mix it into the batter. Add in the vanilla, instant coffee powder and sugar and mix until fully incorporated.
  • Scoop the batter onto the prepared baking sheet, and bake in the oven for 20-25 minutes, or until golden brown.

  1. Storage: You can store these cookies in an airtight container at room temperature for up to 3 days or in the fridge for up to 1 week.
  2. To freeze, place cooled cookies in a freezer safe container and freeze for up to 3 months. When ready to eat, allow to thaw at room temperature for 10-15 minutes.
  3. Use a medium cookie scoop to scoop the batter on the cookie sheet. This medium cookie scoop creates exactly 7 cookies for this recipe.
  4. Make sure there are no big banana lumps left after mashing the banana. The banana is the "glue" of this recipe, so it will help ensure that the cookies hold their shape, even without eggs.

  3. Was in the hunt for a “1 ripe banana” recipe and thank goodness for writing an article about “10 things to make with only 1 ripe banana!“
    Have to admit I wasn’t sure at first, but loved your “easy, short list ingredients” approach!
    It was yummy! I didn’t have any chai tea bags but used 1 tsp of my roasted chai mate loose leaf tea (bigger tea grains, but I tried it first without grinding finer), and it still worked. Taste is definitely reminiscent of a chai, but I think not as strong simply because I used a mate chai.
    Your site is definitely a great find!!!
