I think that I have made the perfect Christmas cookie. 

Okay, so maybe after making any kind of cookie I will say that I have made the most perfect cookie recipe ever. But this year, I wanted to do 12 days of Christmas cookies, and as soon as I made these cookies my family told me to just make these cookies every day for 12 days. And I've got to admit, these are my favorite cookies that I have ever made. Period.

This chewy cookie has crisp edges and a chewy center, so you know it's good! 

So if you are looking for a homemade cookie recipe to make this time of year, these Mini M&M Christmas Cookies are the ones for you!

Mini M&M Christmas Cookies Ingredients

These holiday cookies are only made with 10 ingredients. All you need is:

  • melted butter
  • brown sugar
  • white sugar
  • vanilla extract
  • large eggs
  • all purpose flour
  • cornstarch
  • baking soda
  • salt
  • Christmas M&Ms

Tips

Storage: ​Store cookies in an airtight container at room temperature for up to 3 days. To keep the chewy centers, try adding a tortilla in the container. You can refrigerate these cookies for up to 1 week, but the soft centers may harden.

Swap out the M&Ms. Don't have Christmas M&Ms? Try using mini chocolate chips or chopped chocolate bars to roll the top of the cookie in.

Use different sized cookie scoops. I use this medium cookie scoop for a regular-sized cookie, but if you want large cookies, try using either a large cookie scoop or a standard ice cream scoop. You will just need to remember to have more space on the baking sheet between the cookie dough balls to allow these cookies to spread. You will also need to increase the bake time to account for the larger balls of dough.

Do not skip the chill time! I know that it's so tempting to skip placing them in the fridge, but this will just cause the cookies to spread and become thin. If you want a thicker cookie, it is important to chill them!

Ingredients

  • 1 ¼ cup salted butter melted
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 2 teaspoon vanilla extract
  • 2 large eggs
  • 3 cups all purpose flour
  • 2 teaspoon cornstarch
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 10 oz mini Christmas m&ms

Instructions

  • In a large bowl, mix together the butter, sugars and vanilla. Add in the eggs one at a time, mixing after each addition.
  • In a separate bowl, mix together the flour, corn starch, baking soda and salt.
  • Slowly mix the dry ingredients into the wet ingredients until fully combined.
  • Using a medium cookie scoop, scoop the cookie dough onto parchment paper lined baking sheets.
  • Fill a shallow bowl with Christmas m&ms. Gently press the cookie dough balls into the m&ms and return to the baking sheet. Place in the fridge for 30 minutes.
  • Preheat the oven to 350℉. Place 5 cookie dough balls 2 inches apart onto a parchment paper lined baking sheet. Leave the rest of the dough in the fridge until needed.
  • Bake the cookies in the preheated oven for 11-12 minutes, or until the edges are set. Allow to cool on the baking sheet for 5 minutes before transferring to wire racks to cool completely.
