Preheat the oven to 350℉. Line a baking sheet with parchment paper and set aside.
In a medium bowl, mash the banana. Add in the oats and mix until fully combined. Break open the tea bag and mix it into the batter. Add in the vanilla, instant coffee powder and sugar and mix until fully incorporated.
Scoop the batter onto the prepared baking sheet, and bake in the oven for 20-25 minutes, or until golden brown.

Storage: You can store these cookies in an airtight container at room temperature for up to 3 days or in the fridge for up to 1 week.
To freeze, place cooled cookies in a freezer safe container and freeze for up to 3 months. When ready to eat, allow to thaw at room temperature for 10-15 minutes.
