Banana and Kiwi Bread
This healthy whole wheat Banana and Kiwi Bread recipe is perfect for a quick and easy breakfast idea. Tastes like a lightly sweetened cake in loaf form.

My banana bread combos know no bounds! I have added apple, hemp hearts, chocolate chips and now I have added kiwi in this weird sounding but actually really good Banana and Kiwi Bread. I would link some more of my other old recipes, but they have been written so long ago that the photos are actually painful to look at. The pictures are due for an update, and I hope to update them as soon as I stop making cakes, I promise.

But now, I'm taking a break from cake making to make this Banana and Kiwi Bread. I needed something that is NOT covered in layers of sugar to balance having to taste test all of my cake recipes that I am making for my wedding.

I posted the winner here, but that might change as we approach the date. John really wants me to make it with ganache drip, but I haven't really figured out how to do that yet.
Okay, sorry. Tangent done. Back to your regular programming. I was talking about this Banana and Kiwi Bread, wasn't I?

I could talk about this Banana and Kiwi Bread forever. But I promise, I will make it short.
The reason I made this bread this week was because I had a whole bunch of kiwis lying around that have started to go squishy and wrinkly. I'm not going to eat wrinkly fruit raw. I don't trust it for some reason.
But then again, I hate wasting food. I try to do it as little as I can. So since no one was going to eat it in its wrinkly form, I knew I needed to bake with it. And since I also had bananas that were starting to go brown, I decided on a banana bread.

I am always making these "use up your fruit quick" recipes in the summer. I always forget that fruit gets riper faster in the summer with the heat of the house, so I continue to overload my cart with all of the fruit.
This Banana and Kiwi Bread recipe really hit the spot! It isn't as sweet as your typical banana bread, which was perfect for me because I am so sick of all sweet foods. Cake baking can do that to you.
And it is so easy to make! The hardest part is waiting for it to cook in the oven. It makes the house smell amazing, and it makes the best nut free snacks that you can bring everywhere.
You can bet that this will be a staple in my kitchen when I return to school in September!

Banana and Kiwi Bread
Ingredients
- 2 cups whole wheat flour
- 1 teaspoon baking powder
- ¼ teaspoon baking soda
- ½ teaspoon salt
- ½ cup coconut oil
- ⅓ cup granulated sugar
- ¼ cup honey
- 2 large eggs
- 4 medium ripe kiwis, mashed
- 1 medium ripe banana, mashed
Instructions
- Preheat the oven to 350˚F. Line a loaf pan with parchment paper and set aside.
- In a medium bowl, combine the flour, baking soda, baking powder and salt. Set aside.
- In a separate bowl, cream together the coconut oil, sugar and honey. Add in the eggs one at a time, beating after each addition. Mix in the kiwis and banana until fully incorporated.
- Mix the dry ingredients into to wet ingredients until just combined.
- Pour the batter into the prepared loaf pan and bake for 55-65 minutes in the preheated oven, or until a toothpick inserted comes out clean.

I kind of love the banana kiwi combination! I love eating the fruits together, so it's only logical that they work beautifully together in this bread, even though I would absolutely never have thought of it on my own!

I've never used kiwis in a savory recipe before - this sounds so good! I like the cracks on top of the bread, it's my favorite part of banana breads.

Wow, can you really taste the kiwi? What is it like?
It is very subtle. But it has that interesting feel when you are eating it, because you have the kiwi seeds in there :p
