Easy Vegan Red Velvet Muffins made without red food dye! The perfect sweet treat for Valentine’s Day, or any special occasion.
I know that it is nowhere near the holiday season, but I have been craving a batch of vegan red velvet cupcakes without the frosting. But since I don’t have a vegan red velvet cake recipe on my blog, I had to come up with a recipe for the base from scratch.
These muffins taste like fluffy cupcakes with a hint of chocolate flavor. This particular recipe doesn’t use non-dairy milk, or milk of any kind, but you could always replace the water with dairy-free milk or homemade vegan buttermilk for a richer taste.
I brought these muffins to my school and gave them to my students, and they didn’t believe me that they were vegan. I promise you, vegans and non-vegans alike will love this recipe!

Equipment
What is a Red Velvet Cake?
It is basically a chocolate cake that has been made into a red cake with the combination of good quality cocoa powder and vinegar. In many modern recipes, recipes will call for liquid food colouring, however you do not need to add any if you natural cacao powder. It also typically has cream cheese frosting, but if you wanted a vegan one you can always make some dairy free cream cheese frosting.
Tips
Storage: Store these muffins in an airtight container at room temperature for 3-4 days. They will last a couple of days more if stored in the fridge.
For a deeper red color: Add in some red food coloring. If you still wanted to make this without dye, your could also use beet powder.
Make fluffy vegan red velvet cupcakes. Since these muffins have such a fluffy texture, they work well as vegan cupcakes. Just make some tangy vegan cream cheese frosting. I particularly love this recipe.
