I have been trying to think of more things to make Evan to snack on. We are going on a very long road trip soon, so I am testing out all sorts of different portable recipes that I can make him before we leave so he's not fussy in the car. 

This might be all for nothing, because the tastes of a 1 year old could change just like that. But luckily, he has been happily eating these Vegan Vanilla Muffins lately. Hopefully these will satisfy him in the car between meals!

What you need to make Vegan Vanilla Muffins

This uses mainly pantry essentials. All you need is:

  • flour
  • sugar
  • baking soda
  • salt
  • oil
  • vanilla extract
  • white vinegar

Tips

  • Make some variations!  These muffins are so versatile, you can add any mix-ins that you may have at home. I personally love adding chocolate chips, or nuts. But whatever you have on hand works! Get creative with it!
  • Make ahead. These muffins freeze beautifully. All you need to do is place the cooled muffins in a freezer bag and try to remove as much air from the bag as possible. Then freeze the muffins for up to 3 months. Then, when you need to use them, allow to thaw, or put them in the microwave.
  • You can freeze the batter. Did you know that you can freeze the batter of certain muffin recipes? I tested this out, and it worked so well. All you need to do is place the batter in the muffin pan and freeze. Once the batter is frozen, remove from muffin pan and transfer into an airtight freezer bag. You can freeze the batter for up to 2 months.

Ingredients

  • 1 ¾ cup all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • ½ cup oil
  • 1 cup water
  • 1 tablespoon vanilla extract
  • 1 tablespoon white vinegar

Instructions

  • Preheat the oven to 350˚F. Line a muffin pan with paper liners and set aside.
  • In a medium bowl, mix together all of the ingredients until smooth.
  • Divide evenly in the prepared muffin cavities and bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Notes

I use avocado oil in this recipe, but any neutral oil works.
