Red and White Rice Krispies Treats with Buttercream Frosting

This entire week, I have been browsing food blogs and gawking at all of the delicious looking red, white and blue creations that everyone seems to be making.

Which made me feel incredibly unpatriotic, because HEY. It's Canada day on July 1st and I have made NOTHING in celebration to that. Ever.

This must change.

The great thing about Canada Day baking is that you can make this exact same thing on Valentine's day, and call it a Valentine's day treat. (which is why I tagged it that way. Shh.. don't tell)

PLUS, these are also the colors of the flag of where I was actually born: England. So I'm really being doubly patriotic.

Makes up for the years I didn't celebrate July 1st with a baked treat, eh?

This is so stupidly easy to make, and it is NO BAKE too!! And we all know no bake is code word for I am going to be making this all summer.

And beyond.

I can honestly tell you that the most sweat inducing part of this entire recipe is cutting them into squares. And that is only because all of my knives are blunt. #foodbloggerproblems

Seriously. All you need to do is melt the butter, melt the marshmallows, mix in rice krispies and food coloring, then whip up your frosting.

Finding the center of your rice kirspie layer might be the trickiest thing about this recipe. Although, for anyone celebrating the 4th of July, you might not need to worry about that! Make a bottom layer red, remove from the pan, make a top layer blue, remove from pan, then just sandwich everything together! No need to measure to the center, and plus... MORE DESSERT!

I feel I need to warn you first: these are very sweet. One of these paired with some coffee or tea is perfect for me, but if you have an insane sweet tooth (like me this morning), by all means, have as many as you want.

Ingredients

Rice Krispie Layer

• ▢ 3 tablespoon salted butter
• ▢ 10 oz marshmallows
• ▢ 5 ½ cups Rice Krispies cereal
• ▢ red food coloring

Buttercream Filling

• ▢ ½ cup salted butter, softened
• ▢ 2 cups powdered sugar

Instructions

• Lightly grease a 9×13 inch pan and set aside.
• Rice Krispie Layer: In a large saucepan, melt the butter on medium heat.
• When the butter is melted, add in the marshmallows mixing constantly until melted.
• Remove from heat and add the red food coloring to your desired color. Fold in the Rice Krispie cereal until full combined.
• Drop the mixture into the prepared pan, and press down evenly. Allow to cool.
• Buttercream Filling: In a medium bowl, beat the butter until light and fluffy. Add in the icing sugar, and beat until smooth.
• When the Rice Krispie layer is cool, cut in half. Spread the frosting on one side, and place the other side on top.
• Cut into squares, and store in an airtight container for up to 2 weeks.
