Peanut Butter Truffles

Easy no bake peanut butter truffles recipe. This sweet treat combines creamy peanut butter balls with a delicious chocolate shell.

​Do you currently live somewhere with a heat wave? The weather has been so hot this past month that I have not wanted to turn on my oven at all. 

But with my toddler (and me to be honest) wanting a special treat at the end of the day, I have been experimenting with more no bake dessert recipes lately. And I think that this one might be my favorite.

You can't beat the peanut butter and chocolate flavor combo. It truly is the perfect combination. These peanut butter truffles will be made on repeat this summer.

Who am I kidding? I'm making these all year round.

Peanut Butter Truffles Ingredients

You just need 6 simple ingredients to make these peanut butter chocolate truffles. All you need is:

  • creamy peanut butter
  • salted butter
  • powdered sugar (also called confectioners' sugar)
  • vanilla extract
  • chocolate chips
  • coconut oil

Equipment

  • medium or small cookie scoop
  • cookie sheet
  • parchment paper (or wax paper)
  • hand mixer
  • medium microwave-safe bowl

Tips

Storage: ​store these homemade truffles in an airtight container in the fridge for up to 2 weeks. I would not recommend storing at room temperature, as the chocolate could melt depending on the temperature and humidity in your house.

Do you need to use coconut oil? ​Unfortunately, coconut oil is the only oil that would work here. Because you want the chocolate to harden, you want an oil that hardens when cold. Oils like avocado or vegetable oil remain liquid even when cold.

Variations

Change up the melted chocolate. ​You can use whatever you want for the chocolate coating. I typically use semi-sweet chocolate, but milk chocolate, white chocolate and dark chocolate chips all work great.

Add different sprinkles depending on the holiday season. This recipe truly is a must for your holiday gatherings. Just swap out the sprinkles based on the time of the year, like red and white for Christmas or hearts for Valentine's Day. They never fail to impress on holiday platters.

Don't like the peanut butter flavor? No problem! Swap out the peanut butter for any of your favorite nut butters. I personally love making this with cashew butter because it is so creamy. But you could even use cookie butter for a more decadent truffle recipe.

Peanut Butter Truffles

Ingredients

  • 1 ½ cups creamy peanut butter
  • 1 cup salted butter, softened
  • 1 teaspoon vanilla extract
  • 4 cups powdered sugar
  • 3 ½ cups chocolate chips
  • 1 ½ tablespoon coconut oil

Instructions

  • In a medium bowl, cream together the peanut butter and butter until light and fluffy. Mix in the vanilla extract.
  • Sift in the powdered sugar. Using a hand mixer, mix until fully incorporated.
  • Line 2 baking sheets with parchment paper.
  • Scoop the peanut butter mixture using a medium cookie scoop. Form into balls using your hands and return to the baking sheet.
  • Place peanut butter balls in the freezer for at least 30 minutes to harden.
  • In a medium microwave safe bowl, microwave the chocolate chips and coconut oil, mixing every 30 seconds until smooth.
  • Using a fork, dip the peanut butter balls into the melted chocolate and return to the baking sheet. Place baking sheet in the fridge until the chocolate has hardened.

  1. I've been searching for a copycat recipe to Gardner's, Sarris or Asher's peanut butter meltaways or a really smooth creamy peanut butter filling. I do not want the Reese's texture! I'm assuming the more powder sugar used makes a more crumbly texture.
    CHOCOLATE TIP... I'VE BEEN COATING CANDY FOR YEARS. I USE DBL. BOILER. I WILL MELT QUARTER CUP OF CRISCO OR SHORTENING first to avoid lumps TO ONE POUND OF CHOCOLATE WAFERS. THIS WILL THIN THE CHOCOLATE AND MAKE SHINY. Paraffin wax.melted will also make it thin and shiny.
