Every night before bed, I think about making some overnight oats to get ready for the warmer weather.

And every night I think that it isn't warm enough for the overnight oats. I need a big, warm bowl of oatmeal in the morning.

This Coffee Peanut Butter Cup Oatmeal really hits the spot.

Right now, we are basically living off of whatever we can find in the cupboards.

I haven't been grocery shopping in over a WEEK!! If you know me at all, you will know that that is almost an eternity in my eyes.

So you can bet that I am living off of the food staples I have in my cupboards: oats, peanut butter and chocolate.

You might be surprised to hear that this oatmeal bowl is actually pretty healthy.

It is sweetened with stevia, and has chia seeds in it for additional fibre and protein.

The peanut butter cup on top is optional, but highly recommended. I used a healthier brand of peanut butter cup, so that basically means that this breakfast is guilt free.

This oatmeal reminds me of my peanut butter mocha oatmeal. But that oatmeal didn't have peanut butter cups on top now did it.

Ingredients

  • ½ cup strong brewed coffee
  • ½ cup milk of choice
  • ½ cup rolled oats
  • 1 tablespoon chia seeds
  • 1 tablespoon cocoa powder
  • 1 tablespoon peanut butter
  • 1 packet stevia
  • 1 peanut butter cup, chopped

Instructions

  • Heat the coffee and milk in a small saucepan. Add in the oats, chia seeds, cocoa powder, peanut butter and stevia. Bring to a boil, and reduce the heat. Allow to simmer for 4-5 minutes, stirring occasionally. 
  • Pour into a bowl, and top with the chopped peanut butter cup.

Notes

You can also use cold brew concentrate in place of the strong brewed coffee.

    Oh this is amazing. Literally got chia seeds on the weekend to do a chia pudding for breakfast and then came across this. It has all my faves - coffee, peanut and oats! I'll have to let you know how it goes. 😀

    Adding coffee to this oatmeal is a genius. I usually have a cup of hot coffee in the morning, but with this, it's okay to skip. 🙂

    This is brilliant! I was looking for something different and I would have never combined these ingredients on my own, but boy am I glad I tried this oatmeal. So good!
