If you haven't noticed yet, I am a huge fan of Nutella. I put Nutella in basically everything. And these Nutella Oatmeal Breakfast Bars are one of my new favorite ways of consuming Nutella.

This easy bar recipe mixes creamy Nutella with hearty oats to create a breakfast bar that is actually pretty healthy. Healthy breakfasts and Nutella don't usually go together, but somehow it works here. My toddler requests these bars daily now, so I have made it a habit to always have some in the fridge for a quick and easy breakfast.

It is summer now, and since I am a teacher, I have the luxury of having slow mornings with elaborate breakfasts. But when I go back to work in a couple of months, I am definitely going to be making a batch at the beginning of the week for meal prep. Then I will have breakfasts done for the entire week... or at least a couple of days. To be honest, these bars don't last long in my house.

Nutella Oatmeal Breakfast Bars Ingredients

This Oatmeal Nutella Bar recipe is made with just 8 simple ingredients. All you need is:

  • quick oats
  • large eggs
  • unsweetened applesauce
  • Nutella chocolate hazelnut spread
  • white sugar
  • vanilla extract
  • baking powder
  • sea salt

Tips

Storage: ​Store leftover Nutella oatmeal bars in an airtight container at room temperature for up to 2 days, or in the fridge for up to 1 week.

Add in your favorite mix-ins. ​This is a great base recipe, but if you wanted to kick it up a notch, try adding in some dried fruit or nuts. If you wanted it to be even more decadent, try adding some semisweet chocolate chips or mini marshmallows into the wet mixture before baking.

Drizzle something on top. Having these Nutella oat bars plain is just fine, but I love adding a drizzle of peanut butter or melted hazelnut chocolate spread on top of the buttery oatmeal crust.

What oats to use. ​I find that it has the best texture when using quick oats, but rolled oats (also called old-fashioned oats) do work well too.

Ingredients

  • 2 ½ cups quick oats
  • 2 large eggs
  • ½ cup applesauce
  • ½ cup Nutella
  • 2 tablespoon granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ¼ teaspoon salt

Instructions

  • Preheat the oven to 350℉. Lightly spray a 9x9 inch baking pan with cooking spray and set aside.
  • In a large bowl, mix together all of the ingredients until fully combined.
  • Pour the mixture into the prepared baking pan and bake in the preheated oven for around 35 minutes. Allow to cool completely before cutting into squares.
