How this is my first ice cream recipe of the season?

finally bought an ice cream maker all the way in September after leaving my old one behind in Vancouver. And now, almost one year later, I am dusting it off (and it's new too!) and making my first ice cream recipe in Toronto.

Is it bad that I bought a tub of ice cream just for the container?

This is why it took me so long to make my first ice cream recipe. I bought a tub of ice cream, thinking we would finish it off in a couple of days and I can be on my merry way making ice cream all summer long.

Um..yeah. No.

I bought cherry ice cream and apparently John hates cherry ice cream. Who hates cherry ice cream?? Is that even a thing?

So it was up to me to finish this tub of ice cream. Alone. With John sitting there eating fruit and judging me.

Eventually I convinced him to help me out with eating the cherry ice cream by drizzling some chocolate magic shell on top. Seriously best combo EVER.

If you want a no fail dessert, go out and buy some cherry ice cream and make that super easy magic shell. You won't be disappointed.

Or, you know. Just make this ice cream.

It's funny, because when I asked John what I should make for my first ice cream recipe in Toronto, he suggested vanilla ice cream.

Vanilla. Are you kidding me?

Not that there is anything wrong with vanilla ice cream. I actually love it. But when he requests the same ice cream EVERY SINGLE TIME I pull out my ice cream maker?? Yeaahhh, I think I am going to switch it up a little bit.

And guess what? This became one of his new favourite ice cream recipes! (Score: Cathleen-1, John-0). The graham crackers give this ice cream a truly unique texture, while the chocolate chips.. well. Chocolate chips are just always a good idea.

Tried (and failed) to make the chocolate magic shell look good on top of the ice cream. But trust me. It tasted ah-mazing.

Ingredients

  • ½ cup brown sugar
  • 1 tablespoon honey
  • 6 graham crackers, crushed
  • ¼ teaspoon salt
  • 1 ½ cups whipping cream, divided
  • 1 ½ cups milk
  • 1 teaspoon vanilla extract
  • ½ cup chocolate chips

Instructions

  • In a medium saucepan over medium heat, heat the sugar, honey, graham crackers, salt and 1 cup whipping cream. Cook until sugar has melted.
  • Stir in the milk, vanilla and remaining ½ cup of whipping cream. Cover, and place in the refrigerator for at least 3 hours.
  • Pour the mixture into your ice cream maker, and process according to manufacturer’s instructions, adding the chocolate chips when the ice cream has thickened.
  • When the ice cream is done, pour into an airtight container, and freeze until ready to serve.

  2. Graham crackers and chocolate are a classic combination. I tend to like ice cream best when it is made with eggs. Enjoy your new ice cream maker.

  3. I love homemade ice cream but am just to lazy to get my ice cream machine out, but this one is very tempting to make. Looks lovely 😀
