This Easy Apple Coffee Cake is one of my favorite ways to use up some extra apples. This moist cake makes a great brunch idea.

I just had some extra sour cream and some apples that needed to be used, and thought: why not bake with it? Which, you know, is pretty much my first thought when I have ANYTHING extra lying around that needs using. Ever since I’ve been informed that some of the foods that are sold in stores contain wood pulp, I have started making my own food. One, because I know what I’m putting in it, and two, because I still think that baking is fun. Maybe it will wear off sometime. I really hope not..
And while there is no actual coffee in this coffee cake, it is one of the most perfect cakes to eat alongside your hot cup of coffee.

Easy Apple Coffee Cake Ingredients
This Apple Coffee Cake recipe is super easy to make. All you need is:
Cake:
- salted butter
- white sugar
- large eggs
- vanilla extract
- all purpose flour
- baking powder
- baking soda
- salt
- sour cream
- apples
Streusel topping:
- brown sugar
- unsalted butter
- ground cinnamon

Tips
Storage: Store this cake in an airtight container at room temperature for 1-2 days, or in the fridge for up to 1 week.
What type of apples to use? I love using tart apples such as Granny Smith apples. If you wanted a sweeter cake, try using Gala or Honeycrisp apples.
Do not overmix your batter. You just mix the flour mixture into the wet ingredients until just combined, otherwise you will not get a very fluffy cake. I would suggest you mix it using a spoon rather than an electric mixer to avoid the risk of overmixing.
Swap out the apples. Use whatever fresh fruits you like in place of apple! Seasonal fruit work best to make sure you have the freshest tasting coffee cake.

Easy Apple Coffee Cake
Ingredients
- 1/2 cup salted butter softened
- 1 cup granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- 2 cups all purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup sour cream
- 2 medium apples cored, peeled and cut into cubes
Topping
- 3/4 cup brown sugar
- 2 1/2 tsp unsalted butter melted
- 1 tsp ground cinnamon
Instructions
- Preheat the oven to 350˚F. Lightly grease a 9 inch springform pan with butter and set aside.
- In a medium bowl, cream together 1/2 cup butter and sugar until light and fluffy. Add the eggs and vanilla and mix well.
- In a large bowl, combine the flour, baking powder, baking soda and salt. Slowly add the wet ingredients and the sour cream until fully incorporated. Fold in apples.
- For the topping, mix together the 2 1/2 teaspoons of melted butter with the brown sugar and cinnamon.
- Pour batter into the prepared springform pan, sprinkle the topping on top, and bake in the preheated oven for around 45-50 minutes, or until a toothpick inserted comes out clean

Agree! Cooking at home is much healthier, cheaper, and taste so much better. I like to know what's in my food too, wood pulp is definitely not something I wanna ingest in my system.
