For the days were you really want an apple pie, but are too lazy to make your own pie crust. You bake cookies. Actually, I don't know. The crust is the best part of the apple pie in my opinion. You can make or break a pie depending on your crust. I think that's why most people buy pre-made crusts to avoid that defining moment when you taste the crust: Does it flake? Is it not cooked enough? 

I will make a classic apple pie recipe soon, I swear. Next time I am in the kitchen for sure. If not a real pie, maybe some hand pies. But for now I would like to act the part of cookie monster and make some more cookie recipes. And these Apple Pie Cookies are the easiest way to get the flavor of apple pie without all of the work involved. It's like eating mini apple pies in a chewy cookie form. And don't forget a scoop of vanilla ice cream. All apple pie recipes, regardless if they are cookies, deserves a little bit of ice cream.

What you need to make Apple Pie Cookies

These cookies mainly use pantry essentials. All you need is:

  • unsalted butter
  • brown sugar
  • milk
  • egg
  • flour
  • salt
  • baking soda
  • cinnamon
  • cloves
  • nutmeg
  • fresh apples (the best apples to use are granny smith apples, but you can use any apple in a pinch)

Tips and Tricks

  • Don't have butter? You can use either shortening or margarine in the place of butter. I have tried both, and they are both fine substitutes in this recipe.
  • How to store these cookies: these cookies can be stored in an airtight container for 5 days. If you wanted them to last a little longer, you can store them in the fridge in an airtight container for up to 7 days. These cookies actually taste great when they are chilled!
  • Instead of adding all of the various spices: you can use apple pie spice! Just make these Apple Pie Cookie as is, but replace the cinnamon, cloves and nutmeg with 2 teaspoons of apple pie spice.

Variations

  • Salted Caramel Apple Pie Cookies: make the full recipe for these cookies as is, but drizzle some caramel sauce (or homemade caramel sauce) on top. For best results, top with flakey sea salt.
  • Butterscotch Apple Cookies: butterscotch compliments apples so well. Simply add in around ¾ cup of butterscotch chips at the same time as the chopped apple to the wet ingredients.
  • Brown Butter Apple Cookies: ​instead of using softened butter, start with cold butter. Heat it in a small saucepan at medium heat until the butter begins to turn golden brown and smell nutty. Allow to cool, then mix in the butter into the large mixing bowl containing the sugar. Because the brown butter makes the cookies a little more nutty in flavor, you can choose sweeter apple in this recipe, such as honey crisps or a pink lady apple.

Ingredients

  • ½ cup unsalted butter
  • 1 ⅓ cup brown sugar, packed
  • ¼ cup milk
  • 1 large egg
  • 2 ¼ cup all-purpose flour
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground cloves
  • ½ teaspoon ground nutmeg
  • 1 large apple, cored, peeled and chopped into cubes

Instructions

  • Preheat the oven to 350˚F.
  • In a large bowl, beat together the sugar and butter, until light and fluffy. Add eggs and milk and mix well.
  • In a medium bowl, combine the flour, salt, baking soda, cinnamon, cloves and nutmeg.
  • Slowly add the dry ingredients to the wet, mixing until fully incorporated. Fold in the apples.
  • Drop the batter by tablespoonful on a lightly sprayed baking sheet.
  • Bake for around 12 minutes, or until the cookies are browned on the edges.
