If you know me at all, you know that I go through very concentrated periods of particular food obsessions before I move on to something else. For the past year, it has been my oatmeal obsession, which is still going strong. You can be sure to expect more oatmeal recipes soon.

But more recently, I have been on a chocolate cup kick, which is just ending around now. Maybe it is because I want to BAKE something in the oven to make my house warmer, but I am saying goodbye to the no bake treats.. for now.

Now, I am all about the brownies.

But since I am making food for one now, I have got to start making it somewhat healthy. Because we all know that I am not going to be eating less any time soon. These Chia Seed Mocha Brownies are keeping me on track.

Also, Thanksgiving potluck treat anyone? I would declare my love to anyone who brought these brownies to MY potluck. Especially since I go CRAZY for all things chocolate. Or in this case, double chocolate!

I just bought a pack of chocolate chunks yesterday, and they are all gone today.

Sure, I used some of them making these brownies. But the other half? Let's just say that mindlessly watching Netflix with a bag of chocolate chunks beside you is a dangerous combo.

Also, keeping a bag of pretzels by a jar of Nutella. That is also a dangerous combo, and pretzels dipped in alll of the Nutella also happened tonight.

Ok, so you can obviously tell that I love me some chocolate. And I hope you do too, because you will see a lot more of it in the weeks to come. Think brownies, peppermint truffles and hot chocolate galore.

But I would also like some suggestions from you, because I am running out of Christmas ideas before I even start! What are you making this year? Gifts, cooking and baking: I want to hear it all!

Chia Seed Mocha Brownies

Ingredients

  • ½ cup chia seeds
  • ½ cup stevia
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup butter
  • ½ cup chocolate chips
  • 4 large eggs
  • ¼ cup strong brewed coffee
  • cup dark chocolate chunks

Instructions

  • Preheat the oven to 350˚F. Line a 9 inch square pan with parchment paper. Set aside.
  • In a food processor, mix together the chia seeds, stevia, baking soda and salt. Set aside.
  • In a large saucepan, melt the butter and chocolate chips until smooth. Set aside to cool slightly.
  • Whisk in the eggs, then the coffee. Add in the chia seed mixture, and mix to combine. Fold in the chocolate chunks.
  • Pour the batter into the prepared pan and bake in the preheated oven for 15 minutes.
  • Remove and allow to cool in the pan completely.
  • Cut into 16 squares. Store in an airtight container.

    I gave it 5 stars for flavour. Fabulously chocolaty! I substituted Lakanto erythritol/monkfruit for the stevia. I used Davidoff instant espresso for the coffee. I used Enjoy life dark chips for both the chocolate chips and chunks. The outside cooked nicely as brownies but the centre was gooey. so I scooped it out and we ate it like Chia pudding. Delicious! Should I bake it longer next time?

    1. So glad you liked the flavour! Your substitutions sound so good! Yes, I would try to bake it longer next time. Ovens vary, so I would test the brownies by shaking the pan slightly. The middle shouldn't wobble. If it does, put it in for longer.
