Ever since I was a kid, I loved peanut butter.

My day was filled with peanut butter sandwiches and just spoonfuls of peanut butter straight out the jar. Those were the days.

Now I have become more sophisticated in my peanut butter consumption. More sophisticated by baking with them so that I can hide the fact that I am consuming super-human amounts of peanut butter in one sitting.

So for all those peanut butter lovers out there, I suggest you make these Reeses Peanut Butter Cookies. You can thank me later.

My favourite part about this recipe is that they are mini, so clearly that means that you can eat more.
 
They are also ready in no time, so you can have these ready to eat faster than it takes to watch an episode of your favourite Netflix show.
 
Now that's fast.

I was thinking about making these cookies with the white chocolate version of Reeses chocolates (like what I used in this Chocolate Layer Cake) but I thought the effect wouldn't look as good as the milk chocolate version.
 
So if you want a quick and easy cookie recipe that are super cute and perfectly portioned, look no further. All you need is a mini muffin pan and ingredients that you probably already have lying around your kitchen. Happy baking!

Reeses Peanut Butter Cookies

Ingredients

  • 1 cup all-purpose flour
  • ½ cup whole wheat flour
  • ¾ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup salted butter, softened
  • 1 cup smooth peanut butter
  • 1 cup granulated sugar
  • 1 large egg
  • 2 teaspoon vanilla extract
  • miniature Reese's peanut butter cups

Instructions

  • Preheat the oven to 350˚F.
  • In a medium bowl, mix together the flours, baking soda and salt.
  • In a separate bowl, beat together the peanut butter and butter until smooth. Add the sugar, egg and vanilla until light and fluffy.
  • Slowly add in the flour mixture and mix until fully combined.
  • Roll dough into small balls and place in cavities of a mini muffin pan.
  • Make an indent in the center of each dough ball and place an unwrapped Reese’s peanut butter cup into each.
  • Bake in preheated oven for 8-10 minutes.
  • Remove and let cool on wire racks.
