It seems like this quarantine is making almost everybody want to bake banana bread. And now I have been influenced by everyone else to make some banana bread too.

So here we go. Vegan Chocolate Banana Bread. Happening this week, and probably every week until I can leave the house.

How is the egg situation in your location? Over here in Chicago, you can't buy more than one carton of eggs at one time.

One carton of eggs!! How am I supposed to go grocery shopping once every 2 weeks if I can only buy one carton of eggs? Don't they know that I am a serial baker?

Time to get creative with my baking. And by getting creative, I mean bake more vegan treats. The best part about this recipe is that you don't need flax eggs! I never have the typical egg replacer at my house, so this is a great recipe that you can make with things you probably already have at home.

The past few weeks, I have been satisfying my baking cravings by making my vegan chocolate cupcakes with vanilla buttercream. But now I'm thinking: we are going to be in this quarantine for a while. I should probably ease up on the cupcakes. Make a healthier recipe.

Vegan Chocolate Banana Bread Ingredients

You just need a couple of simple ingredients to make this vegan banana bread recipe. All you need is:

  • overripe bananas
  • non-dairy milk
  • vegetable oil
  • white sugar
  • all purpose flour
  • baking powder
  • unsweetened cocoa powder
  • walnuts

Tips

Storage: You can store this banana bread in an airtight container at room temperature for around 5 days. You can also store it for 1 week in the fridge.

Freezing: Wrap the banana bread in plastic wrap, then aluminum foil. Place in the freezer for up to 3 months.

Add an extra banana on top. To enhance the banana flavour, slice another banana lengthwise and place it on top of the batter. This will create a beautifully caramelized banana on the banana bread.

Variations

Vegan Chocolate Chip Banana Bread: Make the bread according to the recipe card, but mix in some vegan chocolate chips (I love dark chocolate chips if you can find them) to the dry ingredients.

Gluten Free Chocolate Banana Bread: Instead of all purpose, try using gluten-free flour. I love Bob's Red Mill Gluten Free 1-to-1 baking flour. But you can also swap the flour for oat flour or almond flour. Just know that with almond flour, you may need to add some dairy free milk to make sure the quick bread doesn't end up being too dry. I would suggest using almond milk, soy milk or oat milk.

Ingredients

  • 2 medium ripe bananas
  • 1 cup non-dairy milk
  • cup oil
  • ¼ cup water
  • ½ cup granulated sugar
  • 2 ¼ cups all-purpose flour
  • 3 teaspoon baking powder
  • ¼ cup cocoa powder
  • ¼ cup walnuts, chopped (optional)

Instructions

  • Preheat the oven to 350˚F. Line a loaf pan with parchment paper and set aside.
  • In a large bowl, mash the bananas. Mix in the milk, oil and water.
  • In a seperate bowl, mix together the sugar, flour, baking powder and cocoa powder.
  • Slowly mix the dry ingredients into the wet ingredients until fully incorporated. Fold in the walnuts, if using.
  • Pour the batter into the preheated loaf and bake in the preheated oven for 60-70 minutes, or until a toothpick inserted comes out clean.
