
It’s my last day of my practicum today, and it’s one of the saddest days of the year.
I mean, it’s great that I won’t be AS busy now. Actually that’s not true. Now I will be going to school from 8AM-8PM.. But I am going to miss the students a lot. I know this is the most cheesy thing to say ever, but I think I have learned more from them than they have from me.
So it’s going to be a partying day today. Cupcakes, cookies, potato chips…indulgence at it’s finest.
In which case, I think I need a healthy breakfast. You know, to balance out the intense amount of unhealthy food that I am going to consume today.
And I know that I am going a little nuts with the chia seeds, but I really can’t help myself. At least this time it’s a healthy addiction.
Even though I usually top my chia seed puddings with homemade granola, my raisin and apricot granola that I just made is long gone. So I had to make do with blueberries and store bought granola. And since blueberry season is fast approaching, I see the summer being filled with more puddings like this.

Vanilla Chia Pudding Ingredients
You just need 4 simple ingredients to make this Vanilla Chia Seed Pudding recipe. All you need is:
- 1 1/2 cup milk
- 1/4 cup of chia seeds
- 1 tsp vanilla extract
- 1 tsp maple syrup
That’s it!

Tips
Make it vegan. In the recipe, I don’t specify what type of milk that I used because you can really use anything! Some non-dairy milk that I love in this recipe is oat milk and full fat coconut milk. Soy milk and unsweetened almond milk work okay in this recipe, but it won’t make it as thick. But whatever plant-based milk you have on hand would work.
Any type of chia seed works. I use black chia seeds, but white chia seeds or a mix of chia seeds you have on hand will work well in this recipe.
Storage: Store the chia pudding in an airtight container in the fridge for up to 5 days. I like to store it in a mason jar, because then it makes a great easy breakfast that you can take on the go.
Give it a good stir 10 mins after mixing ingredients together. For best results, after you mix all the ingredients together the first time, wait for 10 mins and mix for a second time. It’s also best to let it sit overnight to eat the next day.
Variations
Add in some fresh fruit. Adding in your favorite fruits to this recipe can add so much flavor to this already great breakfast. I like adding some fresh berries on top, or mixing in a fruit puree.
Mix in some healthy fats. Nut butters and peanut butter are a great addition to this recipe. For nut butters, my favorites to mix in are almond butter or cashew butter. If you are feeling extra indulgent, try sprinkling some chocolate chips on top.

Vanilla Chia Pudding
Ingredients
- 1 1/2 cups milk of choice
- 1/4 cup chia seeds
- 1 tsp pure vanilla extract
- 1 tsp maple syrup
Instructions
- In a medium bowl, mix together all the ingredients, and refrigerate. Over the course of the next half hour, whisk the pudding every 10 minutes as it begins to thicken. This prevents the chia seeds from clumping. After the half hour is up, keep refrigerated for 3 hours or overnight.

Last night I made some tapioca pudding from scratch (which looks a little like your pudding) but I had to first soak the tapioca pearls and then cook them for about 15 minutes.
