Vegan Cherry Oatmeal

When cherries are in season, I go crazy. I buy bags and bags of them to snack on throughout the day.

Heck, I even got my 8 month old baby obsessed with them. And with this years cherries being so sweet and juicy, I don't blame him.

So obviously, I am going to be making this Vegan Cherry Oatmeal every other day until I can no longer find cherries in stores.

What you need to make Vegan Cherry Oatmeal

Apart from the 100% cherry juice, this oatmeal is made with ingredients I typically always have on hand when cherries are in season. All you will need is:

  • 100% tart cherry juice
  • oatmilk
  • rolled oats
  • chia seeds
  • cherries

Variations and substitutions

Of course, this oatmeal can be made non-vegan as well. You can switch out the oat milk with whatever milk you have on hand, however I really believe that oatmeal tastes SO much better made with oat milk. Maybe it's just me.

And if you didn't want to make a special trip to buy 100% tart cherry juice, you can substitute filtered water. However, it will not have the same very cherry taste that I love in this oatmeal.

You can also switch up the fruit in this oatmeal! I wouldn't recommend anything citrusy because it doesn't mix well with oatmeal, but try apples or cranberries.

Ingredients

  • ½ cup 100% tart cherry juice
  • ½ cup oatmilk
  • ½ cup rolled oats
  • 1 tablespoon chia seeds
  • 5 medium cherries, pitted and chopped

Instructions

  • Heat the cherry juice and milk in a small saucepan. Add in the oats and chia seeds. Bring to a boil, and reduce the heat. Allow to simmer for 4-5 minutes, stirring occasionally. 
  • Pour into a bowl and top with cherries.
