Strawberry Mug Cake

It's exam week at my school next week! But in this new role reversal as a teacher, I am looking forward to exams. Exams let me catch up on marking, and maybe even actually have a life. Something most of my students don't think I have (and almost rightly so at the moment).

But I don't have any free time yet. Right now, I'm marking, tutoring other students, and creating a HUGE batch of retests for my students, so that they can practice every kind of math concept that I could possibly throw at them during their final exam. Maybe I do deserve that "Best Teacher Ever" mug that one of my students gave me last week. (and maybe I should have used that mug for this mug cake)

I have made this mug cake at least 4 times this past month, but I have been too busy to post it. (Obviously not too busy to make it... it literally takes less than 5 minutes to make).

But to celebrate strawberry season, I may need to make this easy dessert at least one more time. This mug cake is the perfect dessert for when you want a little treat but don't want to make a full cake. Plus, it's so much fun to make.

Strawberry Mug Cake Ingredients

You just need 7 simple ingredients to make this quick dessert recipe. All you need is:

  • all purpose flour
  • white sugar
  • baking powder
  • egg
  • milk
  • oil
  • fresh strawberries

Tips

If you want an even stronger strawberry flavor: ​you can add a little bit of strawberry extract.

Add a topping for an extra decadent sweet treat. ​I love adding a scoop of vanilla ice cream or some whipped cream on top,  But chocolate syrup or lemon glaze would also be a great addition.

Pay attention to the size of the mug. You will need a microwave-safe mug that is large enough for the cake, but also leaves room for the cake to rise in the microwave. The first time I made a mug cake, I used a small mug which resulted in me cleaning the entire microwave afterwards. I recommend using at least an 8 oz mug, or a small ramekin.

Variations

Switch out the strawberries for your favorite fresh berries. ​While sweet strawberries are my berry of choice, I have also tried it with blueberries and raspberries with success. Next time I will try blackberries!

Make it a Strawberry Chocolate Mug Cake. ​Mix in some mini chocolate chips to the dry ingredients.

Ingredients

  • 5 ½ tablespoon all-purpose flour
  • 4 tablespoon granulated sugar
  • teaspoon baking powder
  • 1 large egg
  • 3 tablespoon milk
  • 3 tablespoon oil
  • 2 medium strawberries, cut into small pieces

Instructions

  • Combine all of the ingredients except for the strawberries into a microwave safe mug until mixture is smooth.
  • Carefully fold in the strawberries.
  • Microwave for 1 ½ minutes and see if it’s done. If not, microwave for an additional 30 seconds.

  4. What a wonderful idea! I've only seen the chocolate version before but this one with fresh strawberries is really calling to me. We are having our grandsons over on Thursday and I think I'll make one for each of them too 🙂 Good luck with exam week!

  5. I used to teach high school, and I totally remember exam time! I also remember spending hours grading all the exams, and I think this strawberry mug cake would be a requirement to help get through the grading! And there is a nice long break coming (hopefully), too!

This might be too dangerous to have at my fingertips to make in such a short time...strawberry shortcake is my favorite dessert of all time and this just might be too handy to have that on hand at all times, lol. Looks good. I will give it a try...seems like a whole lot of sugar, is that measurement right? Thanks.

    1. I did use that much sugar. This mug cake is quite indulgent. I have also tried it with less (3 tablespoons) which was good too, but it all depends on how sweet you like your cakes.
