Rice Krispies Peanut Butter Balls

These Rice Krispies Peanut Butter Balls make such a quick and easy recipe for when you want a no-bake sweet treat fast.

I am always craving Buckeyes, but then I thought: are people only interested in those around Christmas time? Since I only ever see them on holiday cookie trays, and it is nowhere near the holiday season, I decided to make some no bake peanut butter balls instead.

But they aren't your regular peanut butter balls. These Crispy peanut butter balls are made with Rice Krispie cereal to give them that extra crunch.

My toddler has been asking for these Rice Krispies Peanut Butter Balls every day for dessert now. They are such a big hit with my family, and I am sure they will become a family favorite for you too. Or of course you can give them as gifts if you like. They make a great gift because they keep for so long. That is, if you can keep them around long enough to gift. They disappear pretty quickly in my house, you'll probably need to make a second batch for yourself.

Rice Krispies Peanut Butter Balls Ingredients

These Peanut Butter Rice Krispie Balls are made with only 5 simple ingredients. All you need is:

  • creamy peanut butter
  • unsalted butter
  • powdered sugar
  • vanilla extract
  • Rice Krispies Cereal

Tips

Storage: Store any leftover Rice Krispie peanut butter balls in an airtight container in the fridge for up to 3 weeks. I would not recommend having them at room temperature, as they may lose their shape.

Coat in melted chocolate. If you wanted to add a chocolate coating to make these more like Buckeye balls, just place your favorite chocolate and some coconut oil in a small microwave-safe bowl and microwave in 30 second intervals, mixing until smooth. Some of my favorite chocolates to use is milk chocolate or dark chocolate chips, but semi-sweet chocolate chips is always the choice if you want the classic Buckeye.

Make it with another cereal. ​You can really use any crispy rice cereal that you have on hand. But if you don't have any, you can also use crushed Corn Flakes, puffed rice or Chex cereal in its place.

Add sprinkles! If you wanted these crunchy peanut butter balls to be more colorful, add in your favorite sprinkles! Sprinkles are always a good idea in my opinion.

Ingredients

  • 1 cup creamy peanut butter
  • 3 tablespoon unsalted butter softened
  • 1 ½ cups powdered sugar
  • ½ teaspoon vanilla extract
  • 1 ¼ cup Rice Krispies Cereal

Instructions

  • In a medium bowl, cream together the peanut butter and butter until smooth. Mix in the powdered sugar and vanilla until fully incorporated.
  • Add in the Rice Krispies and mix by hand until they are uniformly distributed.
  • Line a baking sheet with wax paper or parchment paper.
  • Using a medium cookie scoop, scoop the peanut butter mixture onto the prepared baking sheet and place in the freezer for 30 minutes.
  • Remove from the freezer and roll into balls using the palms of your hand. Store in an airtight container in your fridge.
