This summer has been the season of no bake desserts. You have no idea how many times I have made a different variation of this no bake cookie recipe. The weather was so hot, I needed no bake treat recipes on hand at all time.

These No Bake Nutella Oatmeal Cookies are one of my husband's favorite recipes. This simple dessert packs in the creamy Nutella flavor, while the oats give it a nice and chewy texture. The first time I made this recipe, my husband instantly requested that I make it a second time. It is that good.

No Bake Nutella Oatmeal Cookies Ingredients

These easy Nutella No Bake Oatmeal Cookies are made with 7 simple ingredients. All you need is:

  • white sugar
  • salted butter - or unsalted butter + ¼ teaspoon salt
  • milk​ - any milk works! If you wanted non-dairy options, almond milk and coconut milk go great in this recipe.
  • unsweetened cocoa powder
  • Nutella​ - or any hazelnut chocolate spread
  • vanilla extract ​- or vanilla paste
  • quick oats - also known as instant oats.

Tips

Storage: ​Store these no bake cookies in an airtight container at room temperature for up to 5 days.

Do you have to use quick cooking oats? You can replace them with old-fashioned oats, however the texture may be a little more chewy. For best results, I suggest quick oats. If you wanted them this recipe to be gluten free, make sure you get instant gluten-free oats.

Switch up the Nutella. ​If you don't have a jar of Nutella at home, no worries! Replace it with peanut butter (the regular kind, not the natural peanut butter), cookie butter, or any other nut butters you like.

For a thicker cookie: ​Make sure that you are using a cookie scoop to scoop the cookie dough. Not only does this create a uniform shape to your cookies, it gives it a more chewy and solid cookie.

Ingredients

  • 1 ½ cups granulated sugar
  • ½ cup salted butter
  • ½ cup milk
  • ¼ cup unsweetened cocoa powder
  • ½ cup Nutella
  • 1 teaspoon vanilla extract
  • 3 cups quick oats

Instructions

  • Line two baking sheets with parchment paper and set aside.
  • In a medium saucepan, heat the sugar, butter, milk and cocoa powder over medium heat. Continue mixing until the butter has melted. Bring to a rolling boil, then allow to boil for around 2 minutes.
  • Turn the burner to low heat. Mix in the Nutella and vanilla until smooth.
  • Remove from heat, then mix in the oats.
  • Using a medium cookie scoop, scoop the mixture onto the prepared baking sheet and allow to cool at room temperature.
