I was going to post a recipe on some delicious Nutella cookies that I made a while back, but looking at those pictures, I just couldn't look at those cookies and think that they were delicious. They looked flat and blah.

And even though these pictures are only slightly better, I had to share this recipe because, you know me and breakfast. I just can't get enough.

But speaking about breakfast real quick, I just had the weirdest one. I went to sleep at 11:30 PM last night, and woke up at 3 AM this morning STARVING and feeling sick at the same time. Is that normal?

Anyways, I was looking around my house for something to eat that wouldn't make me feel nauseous, and the only that I could find that I was able to stomach was some rice cakes. So I had a whole packet of rice cakes for breakfast...breakfast at 3:30 AM.

Which means, I can save these scones for later. Second breakfast anyone?

Plus these Raisin and Oat Scones are so easy to make. All you need is:

  • milk
  • vinegar
  • flour
  • oats
  • baking powder
  • brown sugar
  • raisins
  • butter
  • eggs

That's it! So you have no excuse NOT to make this!

Raisin and Oat Scones

These Easy Raisin and Oat Scones are surprisingly healthy. Made with whole wheat flour, this is the perfect recipe for breakfast or with a cup of tea.

Ingredients

  • 1 cup milk
  • 1 tablespoon white vinegar
  • ¾ cup all-purpose flour
  • ¾ cup whole wheat flour
  • 2 teaspoon baking powder
  • 3 tablespoon brown sugar
  • ½ cup old fashioned oats
  • ½ cup raisins
  • 3 tablespoon salted butter, melted
  • 1 large egg

Instructions

  • In a small bowl, mix together the milk and vinegar and set aside to “sour”.
  • Preheat the oven to 400˚F.
  • In a medium bowl, mix together the flours, baking powder, sugar, oats and raisins.
  • In a separate bowl, beat together the butter, egg and soured milk. Slowly mix in the flour mixture until fully incorporated.
  • Pour the batter onto a lightly sprayed 8-inch circular pan. Bake for around 15 minutes, or until the scones are golden brown.
  • Allow to cool on wire racks before cutting into wedges

  1. Cathleen, oats and raisins sound good for breakfast. Hope you are feeling OK by now. Maybe that was a case of low blood sugar. About your blah looking cookies, happens to me quite often. The food is good but somehow the pictures don't turn out right 🙁
