Easy Pumpkin Spice Latte Oatmeal recipe. This healthy breakfast idea is made with strong coffee, this is all you need in the morning!
Breaking news: Starbucks is releasing its Pumpkin Spice Latte earlier than ever this year.
They knew we needed it. 2020 has been a year to remember for sure, and that is putting it lightly.
So to celebrate having more weeks of me spending so much money on the drinks, I made a Pumpkin Spice Latte Oatmeal.
If you have been following me for a while now, you will know that making oatmeals out of my favourite drink isn’t a new thing.
Some of my favourite examples of this include my peppermint mocha oatmeal, hot chocolate oatmeal or my matcha latte oatmeal to name a few.
Why I didn’t make an oatmeal recipe after my favourite fall drink ever? We will never know.
But it’s better late than never, right?
I love this recipe because it is so easy to make. All you need is:
- coffee
- milk
- pumpkin puree
- oats
- pumpkin spice
- stevia
- vanilla yogurt
That’s it!
Oftentimes I am afraid to admit that pumpkin spice lattes are indeed one of my favourite things about fall.
But you know what? I should really stop caring. It’s delicious, and I like it, and there is nothing wrong with that.
So any other lovers of that iconic drink out there, cheers to you! Let’s celebrate with this oatmeal. And some Starbucks on the side. 😉
Pumpkin Spice Latte Oatmeal
Ingredients
- 1/2 cup strong brewed coffee
- 1/3 cup milk
- 1/4 cup pumpkin puree
- 1/2 cup old fashioned oats
- 1/4 tsp pumpkin spice
- 1 packet stevia
- 1/4 cup vanilla yogurt
Instructions
- Heat the coffee, milk and pumpkin puree in a small saucepan. Add in the oats, pumpkin spice and stevia. Bring to a boil, and reduce the heat. Allow to simmer for 4-5 minutes, stirring occasionally.
- Pour into a bowl, and top with the yogurt.

Has anyone actually made this recipe? Everyone is commenting about the pictures. I made this and let me say that it’s not my cup of tea for the combined flavors. I couldn’t eat the one serving, I could barely eat 1/3 of it and threw the rest away. Now on to find a replacement oatmeal that tastes good!
