Breaking news: Starbucks is releasing its Pumpkin Spice Latte earlier than ever this year. They knew we needed it. 2020 has been a year to remember for sure, and that is putting it lightly.

So to celebrate having more weeks of me spending so much money on the drinks, I made a Pumpkin Spice Latte Oatmeal.

Oftentimes I am afraid to admit that pumpkin spice lattes are indeed one of my favorite things about fall. But you know what? I should really stop caring. It's delicious, and I like that pumpkin flavor, and there is nothing wrong with that.

So any other lovers of that iconic fall flavor drink out there, cheers to you! Let's celebrate with this oatmeal. This delicious breakfast is such a fun twist on everyone's favorite fall drink, and the best part is that it is actually a healthy recipe. 

So get a little caffeine kick with this healthy breakfast recipe. And maybe get some Starbucks on the side. 😉

Pumpkin Spice Latte Oatmeal Ingredients

I love this pumpkin oatmeal recipe because it is so easy to make. All you need is:

  • real coffee
  • milk
  • pure pumpkin puree (not pumpkin pie filling) 
  • old fashioned oats
  • pumpkin pie spice
  • stevia (or sweetener of your choice)
  • vanilla Greek yogurt

That's it!

Tips

Make it vegan. ​Just use a non dairy milk and yogurt. For plant based milks, my favorite are oat milk or cashew milk. Almond milk works as well, but it won't be as creamy.

For a stronger coffee flavor: ​use concentrated cold brew coffee or a lot of instant coffee in some water. That way, it will taste even more like your favorite coffee drink.

Do you need to use rolled oats? ​You can use whatever oats you like! However, quick oats may result in a more liquid consistency and steel-cut oats might make it a lot thicker. Try adding more or less milk depending on your thickness preference.

Top with your favorite flavors. ​I usually do yogurt with more pumpkin pie spice, but there are so many great toppings to sprinkle on top! Some of my favorites are: pumpkin seeds, chocolate chips or cacao nibs.

Ingredients

  • ½ cup strong brewed coffee
  • cup milk
  • ¼ cup pumpkin puree
  • ½ cup old fashioned oats
  • ¼ teaspoon pumpkin spice
  • 1 packet stevia
  • ¼ cup vanilla yogurt

Instructions

  • Heat the coffee, milk and pumpkin puree in a small saucepan. Add in the oats, pumpkin spice and stevia. Bring to a boil, and reduce the heat. Allow to simmer for 4-5 minutes, stirring occasionally. 
  • Pour into a bowl, and top with the yogurt.

  1. Has anyone actually made this recipe? Everyone is commenting about the pictures. I made this and let me say that it’s not my cup of tea for the combined flavors. I couldn’t eat the one serving, I could barely eat 1/3 of it and threw the rest away. Now on to find a replacement oatmeal that tastes good!
