I can't handle it anymore. Time for an onslaught of pumpkin recipes coming your way.

Let's start with this Pumpkin Snickerdoodle Oatmeal.

Okay, I realize that I made this Pumpkin Spice Latte Oatmeal less than 2 weeks ago. But if I go longer than 2 weeks this fall without making a pumpkin themed breakfast, then something is seriously wrong!

This recipe was modelled after my Pumpkin Snickerdoodles recipe. Like, for actual cookies. It is one of my favourite pumpkin recipes to make for the fall.

But now I can have that flavour in under 10 minutes. And for breakfast. Definitely a win in my books.

Pumpkin Snickerdoodle Oatmeal

What you need to make Pumpkin Snickerdoodle Oatmeal

This recipe is also super easy to make. All you need is:

  • milk
  • pumpkin puree
  • oats
  • pumpkin pie spice
  • sugar
  • cinnamon

That's it!

Pumpkin Snickerdoodle Oatmeal

I like keeping a jar of cinnamon sugar in my cupboard, so that it's easy to sprinkle on to your oatmeal, toast, crepes.. whatever you want really. But feel free to just make the small batch for this oatmeal if you don't use cinnamon sugar as much as I do.

Pumpkin Snickerdoodle Oatmeal

Ingredients

  • ¾ cup milk of choice
  • ¼ cup pumpkin puree
  • ½ cup old fashioned oats
  • teaspoon pumpkin pie spice
  • 1 tablespoon granulates sugar
  • ¼ teaspoon ground cinnamon

Instructions

  • Heat the milk and pumpkin puree in a small saucepan on medium heat. Add in the oats and pumpkin pie spice. Bring to a boil, and reduce the heat. Allow to simmer for 4-5 minutes, stirring occasionally.
  • Meanwhile, in a small bowl, mix together the sugar and cinnamon.
  • Pour the oatmeal into a bowl and top with the cinnamon sugar.
