Okay, so this isn't quite a cupcake, but if you wanted to start the day with an oatmeal that will give you cupcake vibes, then this Nutella Cupcake Oatmeal is for you!

What do you need to make this Nutella Cupcake Oatmeal?

Super easy to make, so you really have no excuse not to make it. All you need is:

  • oats
  • milk
  • chia seeds
  • Nutella
  • cream cheese
  • butter
  • powdered sugar
  • vanilla extract

So basically my pantry essentials.

I have always been a big fan of putting frosting on top of my oatmeal.

Take my Cranberry Bliss Oatmeal, or my Easy Carrot Cake Oatmeal. Something about eating frosting for breakfast makes me happy the rest of the day.

Nutella Cupcake Oatmeal

Apart from the frosting, this oatmeal is actually pretty healthy. Do NOT sweetened your oatmeal base! The frosting will sweeten it enough for you.

If you don't have Nutella on hand, try cookie butter or peanut butter! This recipe is so versatile, you can switch it up with whatever ingredients you have on hand.

Nutella Cupcake Oatmeal

Ingredients

  • ½ cup coconut milk (from a carton, not a can)
  • ½ cup water
  • ½ cup rolled oats
  • 1 tablespoon chia seeds
  • 1 tablespoon Nutella

Frosting

  • 0.5 oz cream cheese
  • 0.5 oz salted butter
  • cup powdered sugar
  • ¾ teaspoon milk
  • ¼ teaspoon clear vanilla extract

Instructions

  • Heat the milk and water in a small saucepan. Add in the oats and chia seeds. Bring to a boil, and reduce the heat. Allow to simmer for 4-5 minutes, stirring occasionally. Remove from heat and mix in the Nutella. Set aside.
  • Meanwhile, in a small bowl, mix together the frosting ingredients until smooth. Set aside.
  • Pour the oatmeal into a bowl, and top with the frosting.

Notes

  1. This frosting recipe makes quite a lot for one bowl. Save some for later by storing it in an airtight container in the fridge.
