This easy Ninja Creami Vegan Pumpkin Biscoff Protein Ice Cream is a delicious way to get a high protein snack or dessert.
Okay, I know that it isn’t pumpkin season, but I just can’t help making homemade ice cream in my Ninja Creami machine. This machine has been a game changer in making delicious ice cream in no time at all. And since we can buy canned pumpkin puree all year round, why not enjoy pumpkin flavors in a delicious dessert right now? Even though it’s as far from the fall season as possible.
I have made a couple of Ninja Creami protein ice cream recipes, but this one might be a personal favorite right now. It has the creamy texture of traditional ice cream, but it is low calorie and has 11 grams of protein per serving. Now that is what I call a win! Maybe I should start working out just so I can use this as my post workout treat.
Ninja Creami Vegan Pumpkin Biscoff Protein Ice Cream Ingredients
This Ninja Creami protein ice cream is just made with 6 simple ingredients. You will need the following ingredients:
- oat milk – coconut milk, unsweetened almond milk or soy milk work well too.
- pumpkin puree – can use store bought or fresh pumpkin puree. Can use pumpkin pie filling if you wanted a sweeter ice cream.
- unflavored protein powder – can also use vanilla protein powder.
- pumpkin pie spice – or a combination of cinnamon and nutmeg.
- instant pudding mix – in whatever flavor you like. I used vanilla.
- biscoff cookies – graham cracker would also be good.

Tips
Boost the Biscoff flavor. The flavor is quite subtle in this recipe, so try adding some melted cookie butter to the mix-ins. Then add some additional Biscoff cookie crumbs after scooping the ice cream into bowls.
Use the re-spin setting. If the ice cream looks crumbly after the first spin, add in an extra splash of milk and set to re-spin until the ice cream mixture reaches a creamy texture.
Add some more mix-ins. You can get so creative with this ice cream by adding more of your favorite mix-ins. I love adding mini chocolate chips or mini marshmallows.
Got leftovers? Just level the remaining ice cream out in your Ninja Creami container, and place in the freezer. When ready to eat, place it in your Ninja Creami ice cream maker and use the lite ice cream setting.

Ninja Creami Vegan Pumpkin Biscoff Protein Ice Cream
Equipment
Ingredients
- 2 cups oat milk
- 1/4 cup pumpkin puree
- 1 scoop unflavored protein powder
- 1/2 tsp pumpkin pie spice
- 2 Tbsp instant vanilla pudding mix
- 3-4 biscoff cookies
Instructions
- In the Ninja Creami pint, mix together the milk, pumpkin puree, protein powder, pumpkin pie spice and pudding mix using a handheld milk frother. Cover and freeze for at least 24 hours.
- Place the frozen pint in the Ninja Creami and set to lite ice cream. If it is powdery, add a splash of oat milk and set to respin.
- Make a hole in the center and place the Biscoff cookies in the hole. Set the Ninja Creami to mix-ins.
