Donuts. They always reminds me of the time I worked at Tim Hortons. Wow, I ate a lot of donuts back then. I haven't eaten them (much) since, but, on a late night browsing on Amazon (which is never really a good idea. The things I have bought browsing Amazon late at night...) I bought a donut pan.

Afterwards, I thought to myself "when have I ever made a donut?" But I suppose there's a first for everything (this isn't my first time using the pan. My second since I bought. My first time, I made some Ice Cream Cake Donuts which didn't quite turn out like donuts. More like moist cake in the shape of a donut.)

It was such a sunny day, I had to make donuts. You know, in case the sunshine didn't brighten up everyone's day.

These Chocolate Dip Baked Donuts are perfectly paired with some coffee. From Tim Hortons. Oh how I miss that place. But actually, on the Tim Hortons nostalgia, I have just won a free coffee with a free coffee in roll up the rim! (for those who don't know anything about Tim Hortons, every spring they have a roll up the rim where there is a 1 in 6 chance of winning something..coffee, watch, car, etc.. I've only won coffee. So much coffee...)

Ingredients

Donuts

  • 1 cup milk
  • 1 tablespoon white vinegar
  • 1 cup granulated sugar
  • 2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground nutmeg
  • 2 teaspoon ground cinnamon
  • 3 cups all-purpose flour
  • 3 large eggs
  • 1 tablespoon maple syrup
  • ½ cup salted butter, melted

Frosting

  • 250 g chocolate chips
  • cup coconut oil

Instructions

  • Pour the milk and vinegar in a small bowl, and let stand for 5 minutes to “sour”.
  • Preheat the oven to 400˚F. Lightly grease a donut baking pan.
  • In a medium bowl, combine the flour, sugar, baking powder, baking soda, nutmeg and cinnamon.
  • In a large bowl, mix together the eggs, maple syrup, butter and “sour” milk.
  • Slowly add the dry ingredients to the wet ingredients, mixing until fully incorporated.
  • Spoon the batter into the prepared baking pan, filling each cavity around half full. Bake for around 12 minutes or until golden brown.
  • In a small saucepan, melt the chocolate chips and coconut oil on medium heat, continually stirring until fully melted. Allow to cool slightly.
  • Dip the cooled donuts in the chocolate. Place on wire racks until chocolate has hardened.
