M&M Muffins

Easy M&M Muffins made with pantry essentials. This muffin recipe is going to be your new go-to recipe for when you want a quick and easy treat.

So I almost didn't post these muffins. Are they pretty? Not really. The M&Ms bleed into the muffins, kind of making them look like a child's art project. But are they good? You bet!

Maybe this is why there are basically no recipes for M&M Muffins on the Internet. Because they just aren't that pretty. But in case you wanted to make them, I will assure you that they taste really good. Also, let's just call them abstract. I feel like I could see a photo of these muffins in a contemporary art museum.

Plus the whole family loves these muffins. My oldest toddler has already requested that I make them again tonight. And let's be honest. It isn't so hard to convince me to bake something these days.

So if you are on the fence about baking some muffins with M&Ms in them, this is me telling you to DO IT!

M&M Muffins Ingredients

You just need 9 simple ingredients to make these M&Ms muffins. All you need is:

  • 3 cups all purpose flour
  • 1 cup white sugar
  • 1 tablespoon baking powder
  • ¾ teaspoon salt
  • ½ cup unsalted butter
  • 2 eggs
  • 1 cup milk
  • 2 teaspoon vanilla extract
  • 2 cups M&M chocolates

Tips

Storage: ​Store cooled muffins an an airtight container at room temperature for 3-4 days. They do not do well in the fridge, as that will dry out the muffins.

Swap out the M&Ms. ​Instead of M&Ms, try using your favorite mix ins! Chocolate chips, nuts or dried fruit work very well.

Do not over-mix. This is advice that I got from my home economics teacher back in 8th grade, and it has stuck with me to this day. If you overmix your muffin batter, it will create tough muffins. Don't fret if the batter is lumpy!

Don't skip allowing muffins to cool in the pan. ​This is to ensure that the bottoms set properly so you don't get a soggy muffin.

Ingredients

  • 3 cups all purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • ¾ teaspoon salt
  • ½ cup unsalted butter softened
  • 2 large eggs
  • 1 cup milk
  • 2 teaspoon vanilla extract
  • 2 cups M&Ms

Instructions

  • Preheat the oven to 400℉. Line muffin pans with paper liners and set aside.
  • In a large bowl, mix together the flour, sugar, baking powder, and salt until combined.
  • Make a well in the center of the flour mixture. Add in the butter and mix into the flour mixture using a fork or a pastry cutter.
  • Add in the eggs, milk, and vanilla extract, and mix until fully incorporated. Fold in the M&Ms.
  • Divide the mixture evenly into the muffin pans and bake in the preheated oven for 15-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Allow to cool in the pan for around 5 minutes before transferring to wire racks to cool completely.
