Mayonnaise Brownies

These Mayonnaise Brownies are the perfect combination of rich chocolate with a bit of tang from the not so secret ingredient.

I am a sucker for fudgy brownies. Get out of here with your dry brownies, I need the fudgy middles and crinkly top of an extra fudgy brownie.

I have made batches and batches of brownies in my lifetime, and these Mayonnaise Brownies might be the best brownie recipe I have made in a while. My toddler is turning into quite the passionate brownie connoisseur, and he thinks that this batch of brownies is his favorite. Now whenever I ask him what baked goods I should make while he sleeps, he requests these brownies.

Mayonnaise Brownies Ingredients

These Mayonnaise Chocolate Brownies are just made with 9 simple ingredients. All you need is:

  • all purpose flour
  • unsweetened cocoa powder
  • pinch of salt
  • baking soda
  • large eggs
  • mayonnaise
  • vanilla extract
  • white sugar
  • semisweet chocolate chips

Tips

Storage: ​Store the cooled baked brownies in airtight container at room temperature for around 5 days.

Swap out the chocolate for the chocolate mixture. ​For the melted chocolate, try using dark or milk chocolate chips. You can also use chopped chocolate bars of your favorite chocolate instead of the plain chocolate chips.

Use brownie mix. For the brownie batter, you can replace all the dry ingredients with box mix and keep the wet ingredients as is.

What type of mayonnaise to use? I know there are so many different jars of mayonnaise flavors if you go to the grocery store. I use the regular Hellmann's mayonnaise, but if you find any neutral mayonnaise you can use that. I wouldn't recommend Miracle Whip.

Ingredients

  • 1 cup all purpose flour
  • 3 tablespoon cocoa powder
  • teaspoon salt
  • 1 teaspoon baking soda
  • 2 large eggs
  • cup mayonnaise
  • 1 teaspoon vanilla extract
  • ¾ cup granulated sugar
  • 2.5 oz chocolate chips

Instructions

  • Preheat the oven to 350℉. Lightly spray an 8 inch square baking pan and set aside.
  • In a medium bowl, mix together the flour, cocoa powder, salt and baking powder.
  • In a large bowl, beat together the eggs and mayonnaise until smooth. Mix in the vanilla and sugar until fully combined.
  • Melt the chocolate chips in a microwave safe bowl in the microwave in 30 second intervals, mixing until smooth. Stir into the mayonnaise mixture.
  • Slowly mix the dry ingredients into the wet ingredients until fully incorporated.
  • Pour the brownie batter into the prepared baking pan and bake in the preheated oven for 25-30 minutes, or until the edges are firm and the top is dry. Allow to cool completely in the pan before cutting into squares.
