Ever since moving to the US, I have become obsessed with cold brew.

It isn't really a thing in Canada, but over here it is so popular. You can even buy bags of coffee specifically for cold brew. So I am trying to put cold brew in everything these days. Cold brew in my lattes, cold brew in my oatmeal, and now cold brew in my brownies.

These Cold Brew Brownies are going to be made on repeat around here until it gets too hot to turn on the oven.

Cold Brew Brownies Ingredients

All you need to make these brownies are:

  • unsalted butter
  • dark chocolate disks
  • white sugar
  • eggs
  • vanilla extract
  • cold brew concentrate
  • flour
  • cocoa powder
  • salt

Variations and Storage

Of course, if you don't have cold brew concentrate available on hand, you can use regular strong brewed coffee. The coffee really enhances the flavour of the chocolate, and creates a fluffy texture to these brownies. You could even experiment by making these brownies using your favourite tea. It won't have the intense chocolate taste that these brownies do, but it would be a fun change of pace!

To store these brownies, you can put them in an airtight container for up to 1 week.

You can also freeze these brownies for up to 3 months. When you want to use them, simply allow to defrost at room temperature, or microwave for 20 seconds.

Ingredients

  • ½ cup unsalted butter
  • 8 oz dark chocolate disks
  • ¾ cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ¼ cup cold brew concentrate
  • ¾ cup all-purpose flour
  • 2 tablespoon cocoa powder
  • ¼ teaspoon salt

Instructions

  • In a medium saucepan, melt the butter and chocolate disks over medium heat, stirring constantly. Pour into a mixing bowl to cool for around 8-10 minutes.
  • Preheat the oven to 350˚F. Line a 9 inch square baking pan with parchment paper and set aside.
  • Whisk the sugar into the chocolate mixture. Add in the eggs one at a time, whisking after each addition. Whisk in the vanilla and cold brew concentrate.
  • Fold in the flow, cocoa powder and salt until fully incorporated.
  • Pour evenly into the prepared baking pan and bake in the preheated oven for 30-35 minutes, or until a toothpick inserted comes out clean.
  • Allow to cool in the pan on a wire rack. Cut into squares and store in an airtight container for up to 1 week.

Notes

You can freeze these brownies in the freezer for up to 2 months.
