Okay, so these photos didn't turn out as well as I would have liked, but I needed to share them with you. Like now.

Maybe I will go back when I have the time and reshoot these cupcakes, but for now, this is what you get.

So it was my birthday on Friday, which means that I got to celebrate being one year older. Not as exciting now that I am out of high school.

I turned 27, so does this technically mean I am in my late 20s? Or can we extend mid-twenties to include 27? That way I can have an ageing meltdown next year instead of right now.

My students didn't help either. One of them came up to me and asked "so how old are you now? You don't look a day above 12". Just to put this into perspective, the student that said that was 18. So not sure if this is a backhanded compliment or if she was being genuine.

But to be honest, I don't know which one I would prefer.

For my birthday, I made myself some cupcakes the day before. You know, in case John forgot about my birthday. Which would be awful, mainly because my birthday is the same day as his brother's.

But to my surprise, John made me a layered cake for dessert. And it was actually really pretty. Now we have a cake and 14 cupcakes and only 2 people in our little apartment.

Not that I'm really complaining. It is my birthday week after all. 🎂

What you need to make Funfetti Cupcakes

You don't need much other than pantry staples to make these cupcakes. All you need is:

  • milk
  • vinegar
  • flour
  • baking powder
  • butter
  • sugar
  • eggs
  • vanilla
  • sprinkles
  • powdered sugar

This Funfetti Cupcakes is a recipe that I will be making and remaking for a long time. I made these same cupcakes for a couple of my students with birthdays recently, and I got no complaints.

Usually I like to top the frosting with extra sprinkles, but I just want to warn you that that may get messy. I was cleaning out sprinkles from all of the nooks and crannies in my house the day after. But I think it was totally worth it.

Ingredients

Cupcakes

  • ¾ cup milk
  • ½ tablespoon white vinegar
  • 1 ½ cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ cup salted butter, softened
  • 1 ¼ cup granulated sugar
  • 3 large eggs
  • 2 teaspoon vanilla extract
  • ¼ cup sprinkles

Buttercream

  • 4 cups powdered sugar
  • 1 cup salted butter, softened
  • 2 teaspoon vanilla extract
  • 1-2 tablespoon milk

Instructions

  • Preheat the oven to 350˚F. Line two muffin tins with paper liners (makes 14).
  • In a small bowl, mix together ¾ cup milk and the vinegar. Set aside to "sour".
  • In a medium bowl, mix together the flour and the baking powder.
  • In a separate bowl, cream together ½ cup butter and sugar until light and fluffy. Add in the eggs one at a time, mixing well after each addition. Mix in the vanilla extract.
  • Mix in the dry ingredients and the sour milk, alternating between the two until fully incorporated.
  • Divide the mixture into the prepared muffin pans. Bake in the preheated oven for 15-20 minutes, or until a toothpick inserted comes out clean. Allow to cool on wire racks.
  • Meanwhile, cream together all of the buttercream ingredients until smooth. Pipe onto the cooled cupcakes.

    Hi! I am making this tomorrow and I am so excited! Looking at the recipe I was just wondering if the sprinkles are to be added in with the flour or folded in when it’s all mixed together??

        Thank you! That is what I ended up doing, it seemed to make more sense haha. They were delicious! They are my boyfriend’s favorite flavor and he said they were better than his moms! 🤭🤫 I will definitely be saving this recipe!

  4. The pictures look fine and the cupcakes look yummy. Looking at the ingredients, I don't think I've ever seen vinegar in a cake recipe. I love the swirl of the frosting. I need to get my decor skills up on my cakes...lol.

    1. The vinegar is to make a soured milk kind of thing as a substitute for buttermilk. I know a lot of my readers don't always have buttermilk on hand, so I don't want to make them think they need to go out and buy some.
