Small Batch White Cupcakes

Easy Small Batch White Cupcakes recipe. When all you need are four mini cakes, this dessert is perfect for you.

Small Batch White Cupcakes

Baby is due to be born this week!

But instead of "sleeping while I can" like everyone keeps telling me to do, I am ever here making cupcakes.

Doing this instead of sleeping. Because when you are 39 weeks pregnant, you can't really sleep anyways.

Small Batch White Cupcakes

But in case I give birth in the next few days, I am making these Small Batch White Cupcakes. So that I don't have a huge batch of cupcakes at home unattended.

Although it might be nice to have a bunch of cupcakes ready for me when I get home.

What do you need to make these Small Batch White Cupcakes?

This uses ingredients I always keep on hand, so it comes together really nicely. All you need is:

  • oil
  • white sugar
  • vanilla
  • egg whites
  • Greek yogurt
  • flour
  • baking powder
  • butter
  • powdered sugar
  • heavy cream

That's it!

Small Batch White Cupcakes

Typically when I want to celebrate something, I make my Funfetti Cupcakes or my Chocolate Cupcakes with Cookies and Cream Frosting. But since I am now on maternity leave, I am not going to be seeing my colleagues, or anyone else to give cupcakes to. These Small Batch White Cupcakes are perfect for just me and John to eat, since it only makes 4 cupcakes.

But with the sleepless nights ahead of us, maybe we need some extra cupcakes to keep our energy up.

I had these with my six-year-old. I figure usually we only eat one or two. We made them tonight and they were so so incredibly delicious. I wish wish wish we had made more. They were so also easy to make. Thank you so much. I’m so excited to make them again soon and now I want to double the batch— They are way too good for just four!!!
