Donut Muffins

Ingredients

  • 2 cups all purpose flour
  • 1 Tbsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 2 large eggs
  • 1 cup plain yogurt
  • 2/3 cup brown sugar
  • 1/3 cup oil
  • 2 tsp vanilla extract

Cinnamon Sugar

  • 1/4 cup salted butter melted
  • 1/2 cup granulated sugar
  • 1 tsp ground cinnamon

Instructions

  • Preheat the oven 350℉. Lightly spray a muffin pan and set aside.
  • In a large bowl, mix together the flour, baking powder, baking soda, salt and 1 tsp ground cinnamon.
  • In a separate bowl, mix together the eggs, yogurt, brown sugar, oil and vanilla until smooth.
  • Slowly mix the dry ingredients into the wet ingredients until just combined.
  • Divide the batter into the prepared muffin pan and bake in the preheated oven for around 15 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Allow to cool in the pan for around 5 minutes before transferring to wire racks to cool completely.
  • In a small bowl, combine the sugar and cinnamon. Dip each muffin into the melted butter, then dip in the cinnamon sugar.
